How To make Sandwich Star Cookies
2/3 c Crisco shortening
1 1/2 c Firmly-packed brown sugar
1 tb Water
1 ts Vanilla
2 Eggs
1 1/2 c All-purpose flour
1/3 c Cocoa
1/2 ts Salt
1/4 ts Baking soda
2 c Miniature semi-sweet
= chocolate chips Filling: 8 oz Cream cheese; softened
1/2 c Icing sugar
3 tb Whipping cream
1 ts Vanilla
1. Preheat oven to 375F (190C). Grease 11 x 15-inch (25 x
37 cm) jelly roll pan with shortening. Place sheets of foil
on countertop for cooling cookies. 2. Combine shortening, brown sugar, water and vanilla in
large bowl. Beat at medium speed of electric mixer until well blended. Beat eggs into creamed mixture. 3. Combine flour, cocoa, salt and baking soda. Mix into
creamed mixture at low speed just until blended. Stir in chocolate chips. 4. Spread into prepared pan using long metal spatula.
5. Bake at 375F (190C) for 9 to 11 minutes, or until set.
DO NOT OVER BAKE. Cool 10 minutes in pan. Cut out cookies with 2-inch (5 cm) star-shaped cookie cutter. Remove cookies to foil to cool completely. 6. For filling, stir together cream cheese, icing sugar,
whipping cream and vanilla until smooth. 7. Spread the underside of half of cookies with filling and
top with remaining cookies. Makes: About 1 dozen cookies -----

Cookies:
Prepare 3 sheets of parchment paper by drawing 12 even rectangles on each, flipping them over, and placing each sheet on a baking sheet
In the bowl of a stand mixer fitted with the paddle attachment, beat together:
2 cups (32 tbsp) softened, unsalted butter
⅔ cup powdered sugar
2 tbsp packed orange zest
1 ½ tsp ground cinnamon
1 ½ tsp ground ginger
1 ½ tsp ground cloves
1 tsp salt
1 tsp ground nutmeg
1 tsp allspice
½ tsp black pepper
Beat for 2-3 mins until creamy, pausing to scrape down the sides of the bowl
In a medium bowl, sift together 3 ⅓ cups all purpose flour + 6 tbsp cornstarch
With the mixer on low speed, gradually add dry ingredients to the wet ingredients. Mix just until well combined.
Place ~1 cup of dough in a piping bag (or Ziploc bag) fitted with a large star piping tip (1M tip)
Pipe a couple small dots of batter under the sheets of parchment paper to get them to stick to the baking sheets.
Then, use a strong squeeze and some elbow grease to pipe zigzag patterns within the drawn rectangle guides. Repeat with all the dough.
Chill in the fridge for 15 mins. In the meantime, preheat the oven to 350℉.
Bake for ~14 mins total, rotating the pans 180 degrees halfway through. Bake for 7 mins, rotate the pans, then bake for ~7 more mins until golden brown.
Allow the cookies to cool completely and make the cherry buttercream.
Cherry Buttercream:
Blend ~½ cup of fresh cherries in a blender or food processor. Strain the pulp through a fine-mesh sieve into a small bowl to extract 2 tbsp fresh cherry juice.
In the bowl of a stand mixer fitted with the paddle attachment, beat 1 cup of softened, unsalted butter for 1-2 mins until creamy.
Add ½ tsp vanilla extract and ¼ tsp salt.
With the mixer on low speed, gradually add 4 cups of powdered sugar. Mix until well combined.
Add 2 tbsp fresh cherry juice. Beat at medium speed for ~2 mins until fluffy and creamy.
Pair up the cookies and flip half of them over to prepare the sandwiches. Pipe buttercream with a large star piping tip (4B tip) in a swirl pattern on top of the flipped cookies. Sandwich the other half of the cookies on top of the buttercream swirls.

Meringue Cookies Recipe
These beautiful meringue cookies are light as air, perfectly sweet, and so easy to make! Great with a cup or coffee and look wonderful on a cookie tray! Meringue cookies are such a delightful addition to the table and so easy to make! I love to flavor mine with a drop of good vanilla but almond and even peppermint are great choices too. Try dipping or drizzling with chocolate for an extra layer of flavor and remember, these make wonderful gifts!.

Italian Cookies with Jam/ Pizzicati Cookies Recipe
This cookie melts in your mouth, with jam of your choice. Perfect for tea, coffee or any time.
Recipe:
• 3 sticks unsalted butter ( softened)
• 8 oz cream cheese ( softened)
• 1 cup sugar
• 1/4 tsp salt
• 2 eggs
• 1 tbsp baking powder
• lemon zest from the whole lemon
• lemon juice from the half lemon
• 5 flat cups all purpose flour, less or more, as needed
Knead the dough until it’s soft and not sticky
Wrap the dough in a plastic wrap and refrigerate for 20-30 minutes
Place the dough on a lightly floured surface and roll until the dough is approximately ⅛ thick. With a cookie cutter cut squares about 3”x3”, or you can cutout circles, using a tea cup
Place half a teaspoon of jam in the center of each square or circle
Bring the sides of the dough together as if to close square or circle, and pinch the ends gently but firmly together to secure them.
Place the cookies on a baking sheet covered with parchment paper. Bake them on 375f for about 17-20 minutes, depending on your oven.
Cookie should be very light brown
You make about 60 pieces cookie
Once completely cooled, sprinkle them with powdered sugar before serving.
Store the baked cookies in an airtight container or sealed jar. Keep them in a cool spot in your kitchen or in the fridge for up to 3-4 days. Longer they stay, more delicious they are ????
You can definitely freeze them in a ziplock bag up to two months
