How To make Sambaar
1/2 c Yellow split peas
2 1/2 c Water
1 ea Onion, chopped
3 ea Garlic cloves, chopped
1 sl Ginger, chopped, 1/2-inch
1 ea Red chili
2 tb Ghee
1/2 ts Cumin
1/2 ts Coriander
1/2 ts Turmeric
1/2 sm Cauliflower, separated into
-- florets 2 md Carrots, diced
1/2 md Eggplant, diced
1/2 sm Cabbage, sliced
Lemon juice 1/2 ts Cayenne
In a large pot, comine the split peas with the water & cook for 30 to 50 minutes, till soft. Heat ghee till hot. Saute, onion, garlic, ginger & chili. (Add more chili if you want a hotter curry). Add the rest of the spices & saute for 2 minutes. Add vegetables & cook for another 5 minutes. Add 1/2 c stock from the split peas. Cover & cook for 15 minutes, or until the vegetables are tender. Add cooked split peas to the vegetables. Squeeze with lemon juice. Check to see if you need salt. Simmer for another couple of minutes & serve. Marlena Spieler, "Hot & Spicy"

Water - ½ cup
For Masala: Oil - 1 tbsp
Fenugreek - ½ tsp
Cumin Seeds - 1 tbsp
Rice - ½ tbsp
Coriander Seeds – 1 tbsp
Chana Dal – ½ tbsp
Cloves - 2
Green Cardamom - 1
Hing / Asafoetida - ¼ tsp
Ginger Garlic - 5-6 + ½ inch (optional)
Coconut - 2 tbsp
Curry Leaves - 1 sprig
Red Chili - 10-12
Haldi / Turmeric - ½ tsp
Kashmiri Red Chili Powder – 1 tbsp
Onion - 1 big (sliced)
Salt - 1 tsp
Water – To make a paste
Oil - 2 tbsp
Green Chili - 2
Assorted Veggies – 1 Cup (I used Bottle Gourd, Raddish and Tomato, You can also use Eggplant, drumsticks, ladyfingers, etc.)
Salt - ½ tsp
Tamarind Pulp - 2-3 tbsp
Jaggery - 1 tbsp
Oil - 1 tbsp
Mustard Seeds - 1 tsp
Red Chili Whole - 3-4
Asafoetida - ¼ tsp
Curry Leaves - 4-5

Toor dal/pigeon pea : 200 grams
Vegetables : 500 grams (I used drumsticks, brinjals and tindora)
Medium size tomatoes : 3
Medium size onions : 2
Green chillies : 4
Chilli powder : 1 to 1 and 1/2 tsp
Turmeric powder : 1/2 tea spoon
Hing/ asifoetida : 1/4
Salt to taste
Tamarind : medium lemon size
Chopped coriander leaves : 1/2 cup
Sambar masala powder : 2 table spoons
For tempering/tadka
Oil : 2 table spoons
Mustard seeds : 1 tea spoon
Fenugreek seeds : 1/4 tsp
Curry : 3 to 4 strings
Hing / inguva : 1/4 tsp
Small sliced onion : 1
Dried red chillies : 2
Servings : 6 to 8 persons
