SIMPLE SALMON WITH PEAR & GORGONZOLA SALAD
SIMPLE SALMON WITH PEAR & GORGONZOLA SALAD
Salmon Rub
1 teaspoon dry oregano
2 teaspoon sesame seeds
1 teaspoon cumin
1 tsp Salt
½ teaspoon crushed red pepper flakes
3 teaspoons brown sugar
2 8-oz. salmon filets
1 ripe lemon
Pear & Gorgonzola Salad
several cups of arugula
2-3 Tablespoons apple jelly, room temperature
2-3 Tablespoons honey
½ cup rice wine vinegar
1 cup olive oil
salt and pepper to taste
½ teaspoon ginger
½ shallot, minced
crumbled gorgonzola
sliced or cubed pear
*Optional: toasted pine nuts or walnuts
Make the rub by combining oregano, sesame seeds, cumin, salt, red pepper flakes and brown sugar. Preheat oven to 375⁰F. Preheat a cast iron skillet (or oven-safe skillet) over medium+ heat. Spoon dry rub over the top of salmon filets and pat in using your hands. Flip salmon and do the same, saving about a third of the rub. Flip again and add a little oil to the top and add the rest of the rub, making layers of rub seasoning.
Drizzle oil to the bottom of your skillet, just enough to cover the bottom. Add salmon to the skillet and sear a few minutes on each side. Place the skillet in the oven to bake no more than 5 minutes.
While salmon is cooking, make homemade salad dressing. In a small bowl, whisk together apple jelly, honey,and rice wine vinegar. Add ginger, salt and pepper. Whisk. Slowly drizzle in olive oil while you whisk like crazy with your other hand to combine! Then stir in shallot at the end. Taste for more s/p, honey, ginger, etc. Season to taste!
In a large bowl, toss arugula, pears, gorgonzola, and dressing. Salt and pepper to taste.
Pile salad in the middle of a plate and set a salmon filet right on top! Then squeeze a little lemon over the salmon, and serve!
