S'mores Cake
What can be more exciting than making your own S’mores Cake? It’s like camping indoors with all the main ingredients of an actual s’more in one cake. After tasting the moist chocolate cake, crunch of the graham crust and the toasted marshmallow frosting we are sure you’d ask for “some more”!
INGREDIENTS
Graham Crust:
3½ cups (350 grams) crushed graham crackers
¾ cup (170 grams) salted butter, melted
Chocolate Cake:
2½ + ⅛ cups (328 grams) all-purpose flour
1⅛ cups (99 grams) cocoa powder, unsweetened
1½ teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
2½ + ⅛ cups (525 grams) granulated sugar
3 large eggs
1½ cups (360 ml) evaporated milk
¾ cup (180 ml) vegetable oil
1½ teaspoons vanilla extract
2 grams coffee powder
1½ (360 ml) hot water
Chocolate Ganache:
1 cup (240 ml) heavy cream, heated
240 grams dark chocolate, chopped
Marshmallow Frosting:
1¼ cups or 8 egg whites
1½ cups (300 grams) granulated sugar
May add 1-2 tablespoons glucose for a chewy texture (optional)

Instant Pot Stuffed S'mores Cake (or S'mores Lava Cakes)

WARNING: This is my favorite dessert recipe to date and may become addicting to any who tries it.
S'mores are the quintessential dessert of summer (or really any occasion). But if you think you need a campfire to make them in the most decadent way possible, think again.
Folks, I present to you the Stuffed S'mores Cake that you can either serve as one giant cake OR as four, individual lava-style cakes! And you can have it either ooey-gooey or slightly firm and chewy like a brownie/blondie/cookie bar.
The secret to making it the best is pressure baking it in your Instant Pot. This is going to ensure it's as decadently moist and perfect as they come - re-inventing and taking the S'more to the next level - ensuring that the marshmallow AND chocolate are both fully melted.
Once you give this one a go, not only will it become one of your favorite desserts of all time, you'll always be wanting, well, S'more!

These decadent s'mores cookie cups are a must bake treat for all dessert lovers! A cinnamon-flavored cookie base made with graham crackers filled with creamy chocolate ganache, topped with toasted homemade marshmallow fluff makes for a delicious treat from scratch!
Would you say this is closer to a cupcake than a cookie???
The marshmallow fluff is actually a vegeratian version that uses corn syrup to transform meringue into that gooey treat we all love!
For those of you who haven't tried making them, cookie cups are super easy and SO versatile! Use any filling imaginable for a panoply of flavors! Apple pie, butterscotch, salted caramel even lemon curd!

How Do You Make Cookie Cups?
To make cookie cups you add cookie dough to a muffin tin, bake until done then use a cylindrical tool like a shot glass or tablespoon to create a well, which you then fill with something delicious! You can make all sorts of fillings and go wild with the flavor combinations. What you you make??

S'mores Cake Recipe... You Really Will Want S'more! Glen And Friends Cooking
This S'mores Cake Recipe is a graham cracker cake with a marshmallow icing and chocolate chips melted on top. It is as tasty as the campfire s'mores we all love, in an easy to bake cake.
Ingredients:
625 mL (2 ½ cups) Graham cracker crumbs
150 mL (⅔ cup) flour
125 mL (½ cup) sugar
10 mL (2 tsp) baking powder
1 mL (1 tsp) salt
2 eggs
250 mL (1 cup) milk
125 mL (½ cup) butter, melted
5 mL (1 tsp) vanilla extract
500 mL (2 cups) mini marshmallows
250 mL (1 cup) chocolate chips
Method:
Preheat oven to 180ºC (350ºF).
Grease and line a 9”x13” baking pan with parchment paper.
Mix together the graham cracker, flour, sugar, baking powder and salt.
In another bowl mix the eggs, milk, melted butter, and vanilla.
Stir the milk mixture into the graham mixture until combined.
Transfer to the baking pan and bake for 15 minutes.
Sprinkle the marshmallows onto the partially baked cake, and then bake another 10 minutes.
Remove from the oven and immediately sprinkle on the chocolate chips.

450ml Cold Coffee
390ml Vegetable Oil (or Sunflower)
