How To make Rum Raisin Cake
2 lg Ripe bananas, peeled
1 1/2 c Sugar
3 x Eggs
1 ts Baking powder
1 ts Salt
3/4 c Dark rum *
1 c Walnuts,coarsely chopped
1/4 c Milk
3/4 c Butter, softened
2 1/2 c All-purpose flour
1 ts Baking soda
1 ts Allspice
1 c Raisins
Mash bananas to make 1 cup. Combine with milk. Cream sugar and butter until light and fluffy. Beat in eggs until blended. Combine flour, baking powder, soda, salt and allspice. Beat 1/3 flour mixture into egg mixture until blended. Beat 1/2 banana mixture until blended. Repeat ending with flour mixture. Beat in rum until well blended, stir in raisins. Pour into 10-inch well greased fluted tube pan. Bake in 350'F. oven for 50 minutes or until cake tests done. Invert on wire rack to cool. Dust with confectioner's sugar. MAKES 16 SERVINGS. * For a flavor variation, instead of rum use 3/4 c orange juice and add 1 TBSP grated orange rind to batter.

Ingredients
To Soak the Raisins
You need
350ml of dark rum
500g of black raisins/currants
- You soak overnight
For $Baking
For this recipe...
I used
2 cups of the Soaked black raisins
3 cups or 375g of All purpose flour
1 cup of white Granulated sugar
300g of Margarine
5 eggs
1 teaspoon of any fruity flavour (I used the lemon flavour...or you can as well use rum flavour too)
1½ teaspoons of baking powder
¼ cup of extra flour for the 2 cups of soaked raisins
(Just to sprinkle and toss so the all the #raisins used for baking wont sink to the base of the cake )
