How To make Romanesque Sauce
1 pk EDEN Spaghetti
-OR EDEN Ribbon Pasta 3 lg Sweet bell peppers
(green or red) 2 Cloves garlic
1/4 c Slivered almonds, toasted
1 lg Lemon; (zest only)
Sea salt and black pepper :
to taste Cut Peppers in half, remove seeds and sear over a burner or under the broiler until thoroughly charred and black. Place in paper bag and allow to sit for 5 minutes. When cool, gently peel off the skin. Meanwhile, place garlic cloves in blender or food processor and mince. For lemon zest, carefully remove the outer skin, not the bitter tasting white layer, with a vegetable peeler or a grater. Add peppers, almonds and lemon zest to blender and mix until coarsely chopped. Spoon over hot or cold pasta. Prep Time: 15 minutes Yield: 4 servings Copyright 1995 Eden Foods, Inc.

Green Gobi Paneer - Romanesco Cauliflower Paneer Curry Recipe
#GreenGobi is my name for the #RomanescoCauliflower, which is beautiful, nutritious and delicious vegetable from Italy. It resembles a cauliflower and is striking green in colour. It has a subtle nutty flavour and is slightly more crunchier than a cauliflower. Romanesco is rich in vitamin C, vitamin K, dietary fiber, and carotenoids. I have no idea why Romanesco Cauliflower is not eaten in India. I first came across this beautiful vegetable in an upmarket grocery store in the UK. I thought it was high time someone posted an Indian recipe with this healthy and yummy vegetable and brought it to the notice of a wider audience. Green Gobi #Paneer is my recipe with the Romanesco Cauliflower.

???? Ingredients :
1 head of cauliflower
Dry ingredients :
150g | 1cup chickpea crumbs or breadcrumbs
1/2tbsp garlic powder
1/2tbsp Italian herbs
salt
black pepper
30g | 2tbsp dairy free parmesan or 2tbsp nutritional yeast
4tbsp olive oil
Batter ingredients :
100g | 1/2 cup chickpea flour (gram flour)
water
pinch of salt
dip sauce ingredients :
250g | 1cup coconut yogurt or any dairy free yogurt
1-2 garlic cloves
1/2 cucumber
1/4 cup fresh chopped dill
black pepper
salt
1tbsp lemon juice
1tbsp olive oil
1/4tsp chilli flakes (optional)

❗You can substitute chickpea crumbs for breadcrumbs ????
❗you can substitute dairy free parmesan for 2tbsp nutritional yeast ????
????Method:
Cut the leaves off the base of 1 head of cauliflower.
Disassemble cauliflower into inflorescences.
Bring a large pot of salted water to a boil.
Transfer cauliflower florets into a pot.
Boil cauliflower for 2-3 minutes.
In a mixing bowl combine 150g | 1cup chickpea crumbs or breadcrumbs. I prefer to use my home made gluten free chickpea crumbs, they are so delicious.
Add 1/2tbsp garlic powder, 1/2tbsp Italian herbs, black pepper and salt.
Add 30g | 2tbsp dairy free parmesan or 2tbsp nutritional yeast and 4tbsp olive oil.
Mix all well together.
Drain cauliflower and set aside.
Add 100g | 1/2 cup chickpea flour (it’s gluten free) to another bowl. You can use any flour of your choice if you do not have chickpea flour handy.
Pinch of salt.
Pour some water.
Whisk the liquid into the flour until you have a smooth batter. The batter should not be too thick or too liquid.
Now dip each cauliflower floret into the batter and coat evenly.
Roll the cauliflower pieces in chickpea crumbs until coated thoroughly.
Transfer to a baking tray lined with parchment.
Repeat until all cauliflower pieces are coated.
Roast in the preheated oven 360F | 180C for 20 minutes.
Time to make delicious, creamy and tangy vegan tzatziki sauce.
Add 250g | 1cup coconut yogurt or any plant based plain yogurt of your choice to a large bowl.
Press 1 or 2 garlic cloves (to your taste).
Finely grate 1/2 cucumber with the skin.
Then set in a fine-mesh strainer and squeeze out excess the moisture.
Chop 1/4 cup fresh dill.
Add black pepper and salt.
Pour 1tbsp lemon juice.
1tbsp olive oil.
1/4tsp chilli flakes (optional).
Stir to combine.
Taste and adjust the flavour as needed. You can store home made sauce in the refrigerator for up to 5 days.
