How To make Rocky Road Refrigerator Cake
1 pk Fudge brownie mix (21.5 oz)
1 1/2 ts Instant coffee powder
1 1/2 ts Rum extract
2/3 c Walnuts; chopped
1 c Heavy cream
2 ts Unsweetened cocoa powder
3 ts Powdered sugar
Salt, a dash 1 c Miniature marshmallows
Recipe by: 365 Great Chocolate Desserts. Preheat oven to 350 degrees F. Line a 9-inch square baking pan with foil. Grease foil. Prepare brownie mix according to package directions. Stir in coffee powder, 1 teaspoon rum extract, and 1/3 cup nuts. Turn batter into prepared baking pan. Bake according to package directions, 25-28 minutes, being careful not to overbake. Let cool completely. To prepare rocky road filling and topping: In a medium bowl, with an electric mixer on medium speed beat cream to soft peaks. Beat in cocoa, powdered sugar, and salt until well mixed. Fold in remaining 1/3 cup nuts, remaining 1/2 teaspoon rum extract, and marshmallows. o assemble cake, cut brownie square into 3 equal strips. Stack strips together with rocky road filling in between and on top. Refrigerate 4 to 5 hours or overnight to allow flavors to meld. To serve, cut into 3/4-to 1-inch slices. -----

Classic Rocky Road | MUST WATCH
Classic rocky road- Something so easy to make and so delicious. The only hard part about this dish is waiting for it to set! You can change any of the ingredients for your own liking. The biscuits provide that extra crunch and the sultanas and glace cherries add that jelly like texture and of course the soft fluffy marshmallow goes perfectly.
Ingredients
175g milk chocolate
150g digestive biscuits
100g mini marshmallows
85g dark chocolate
50g sultanas (could use raisins)
40g glace cherries
3 tbsp golden syrup
Method
1) Place the marshmallows on a baking tray and freeze for up to 2 hours before use (so they retain their shape when adding to the warm chocolate mixture).
2) Grease and line a baking tin approx. (20cm x 26cm).
3) Melt the butter, milk chocolate, dark chocolate and syrup over a medium to low heat.
4) Reserve 100ml of the chocolate mixture and set aside.
5) Crush the biscuits into small chunks.
6) Cut the glace cherries into quarters or in half.
7) Add the crushed biscuits into the saucepan of chocolate and mix.
8) Add in the glace cherries and sultanas and stir.
9) Add the mixture to the prepared tin and press down using a metal spoon (I find it easier than a wooden one).
10) Pour over the remaining chocolate and smooth over.
11) Place int eh fridge for at least 2 hours until set. The longer the better.
12) Cut into your desired squares, EAT and ENJOY.

How to make a rocky road fridge cake.
Rocky road is a no bake fridge cake which consist of melted milk chocolate and marshmallows. You can then add a selection of your favourite chocolates for extra sweetness and crunch. In this video we used Twix for that caramel taste, a Crunchie for the perfect honeycomb crunch, Digestive biscuits and Smarties for sweetness and colour. Set in the fridge overnight for best results and cut into square for the perfect bite!
Ingredients
250g milk chocolate (you can use dark or white chocolate if you wish.)
130g butter
20g golden syrup
40g digestive biscuits (or any other biscuit you like)
40g marshmallows
Twix
Crunchie
Smarties (choose any chocolate you like)
Topping:
150g milk chocolate
Handful of marshmallows and smarties (or whatever you like)
