How To make Roasted Beef with Horseradish Cream
LISA HLAVATY FDGN81A:
1/4 c Vegetable oil
2 tb Cider vinegar
1 ts Salt
1 ts Pepper
1 tb Prepared horseradish
1 ts Garlic;minced
1/4 c Chopped fresh parsley
3 1/2 lb Beef chuck roast
HORSERADISH CREAM:
1/2 c Dairy sour cream
1/2 c Mayonnaise
1/4 ts Salt
1/4 ts Pepper
1 tb Prepared horseradish
1 ts Lemon juice
1 ts Dijon mustard
1/4 c Fresh parsley
In dutch oven stir together all marinade ingredients except parsley and roast; stir in parsley. Place roast in marinade; turn to coat all sides with marinade. Cover; refrigerate overnight. Heat oven to 350. Bake roast in marinade for 1 1/2 to 2 hours or unti roast is fork tender. Meanwhile, in small bowl stir together all horseradish cream ingredients except parsley. Stir in parsley. Cover, refrigerate unti ready to serve. serve over carved roast. Source: Land O Lakes -----

Rib Roast Sauces | 2 Roasted Garlic Horseradish Sauces | Classic Au Jus | Roast Sauces for Christmas
Why not make a variety of delicious rib roast sauces for Christmas dinner? In a matter of minutes, you can make 2 roasted garlic horseradish sauces –a creamy roasted garlic horseradish sauce and an herb and roasted garlic horseradish sauce. Both rib roast sauces are excellent to dip in your juicy rib roast or prime rib. They also make great additions to a tasty French dip sandwich, roast beef or a juicy prime rib. And, as a bonus, I will show you how to make a classic au jus that can be made in a blink of an eye.

3 garlic heads
Roughly 3 tbsp or 45ml olive oil
Salt and pepper to taste
3 sheets of aluminum foil
Bake in oven at 400˚F or 206˚C for 40 to 50 minutes

Dash of paprika
Pepper and salt to taste

Ingredients for the roasting pan:
2 carrots
2 celery stalks
1 large onion
Tips of the garlic heads from the roasted garlic
1 cup or 65g mushrooms
Handful of fresh rosemary
3 tbsp olive oil to lather on the rib roast
Dash of garlic powder
Dash of ground mustard
Little pepper and salt
How I cooked the rib roast - 450˚F or 232˚C for 20 minutes – then turn down the heat to 325˚F or 163˚C for 15 to 17 minutes per pound for a medium rare rib roast (you may want to add 1/2 cup or 125ml water to the roasting tray halfway through the cooking time – to prevent the aromatics from charring)
Ingredients for the Classic Au Jus
1/4 cup or 63ml red wine
2 cups or 500ml beef stock
Salt to taste (if needed)

Classic Roast Beef with Horseradish Cream – Savory
A true classic: roast beef with spicy horseradish cream. Perfect for every occasion and easy to make. Enjoy!
Ingredients
4 lb (1.8 kg) boneless prime rib (at room temperature)
3 tbsp melted butter
coarsely ground black pepper
1 cup cream
1/3 cup prepared horseradish
1 tsp Dijon mustard
Materials
roasting pan or large baking pans
Preparation
Preheat the oven to 450 ° F. Pat the roast dry with paper towel and brush with butter. Sprinkle the meat with the coarsely ground pepper.
Roast the meat
Place the meat in a roasting pan or large baking pan and roast for about 15 min at 450 ° F. Lower heat to 325 ° F and roast 60-90 min or until internal temperature reaches 135 ° F.
While the meat roasts, use a whisk or electric hand mixer to whip the cream with a pinch of salt until stiff. Season with pepper. Gently fold the horseradish mustard mixture into the cream. Remove the roast from oven and cover loosely with aluminum foil. Let the meat rest 15 minutes. Cut the roast beef against the grain into thin slices. Serve the sauce separately.

Betty's Creamy Horseradish Sauce for Beef
Betty demonstrates how to make a luscious Horseradish Sauce. This is a great combination of mayonnaise, sour cream, lemon rind, and grated horseradish. This wonderful sauce is quite versatile, and you can use it in many ways!
Creamy Horseradish Sauce for Beef
½ cup mayonnaise
½ cup sour cream
1 teaspoon grated lemon rind
1/8 to 1/4 cup grated horseradish (I used the jarred variety, and I only used 1/8 cup; it's up to your taste. Don't use the creamy style, because it is not strong enough.)
In a small bowl, combine ½ cup mayonnaise, ½ cup sour cream, 1 teaspoon grated lemon rind, and 1/8 to 1/4 cup grated horseradish. Stir until well combined. Pour into a small serving dish, and provide a serving spoon. I serve this with roast beef, prime rib, and steak. It is also a great spread for roast beef sandwiches, plus you can use it with anything that is enhanced by horseradish flavor.
