1/2 lb Noodles, fresh
-boil til soft;drain & rinse 1/2 lb Roasted pork; shredded
1 c Shredded chinese cabbage
1 c Bean sprouts; wash
1/2 c Sliced waterchestnuts,option
1/2 ts Salt
2 ts Sherry
1/4 c Chicken broth, College Inn
2 tb Oil; for stir frying
SAUCE MIX:
6 tb Oyster sauce
- can add more as per taste 1/2 ts Sugar
1 ds Pepper, heavy dash
Note: Dried Noodles .... 5 cups cooked = 1 lb Fresh Noodles .... 2 1/2 cups cooked = 1 lb Preparation: - Heat Wok - Add oil and let heat - Add salt; stir - Add pork & sherry; stir fry quickly - Add cabbage, bean sprouts, & waterchestnuts; stir fry [45] Sec. - Add stock; place noodles on top - Cover & cook; [1] Min. - Uncover & stir - Add "sauce mix"; stir until evenly seasoned - Serve!

Ingredients
600g fresh noodles
1/2 bulb garlic
250g vegetables (I used salad veggies)
300g pork belly (remove skin and slice quite thinly)
Marinade for pork
1 Tbsp Shaoxing wine
1 Tbsp soya sauce
Seasoning Sauce
1/2 Tbsp sugar
1/4 tsp salt
1/4 tsp pepper powder
3 Tbsp dark soya sauce
1 Tbsp soya sauce
1&1/2 Tbsp oyster sauce
3 Tbsp sweet chilly sauce
2 tsp corn starch
1 C water
Note :
1. The amount can serve 3-4 people.
2. Once the sauce boils, add the noodles. A quick mix through and dish so that the noodles are covered with sauce and has a wet look.
3. Dish up and serve immediately.
4. You can add more vegetables if you prefer.

Lo Mein Noodles

Ingredients
Sauce:
1/4 cup (60 ml) chicken stock
3 tablespoons (45 ml) oyster sauce
1 tablespoon (15 ml) soy sauce
1 teaspoon cornstarch
1 teaspoon sesame oil
Noodles:
3 tablespoons (45 ml) vegetable oil
4 teaspoons ginger, thin julienne
2 teaspoons (10 g) garlic, minced
1/2 pound (250 g) chicken breast or thigh, thin bite-sized slices
2 to 3 cups fresh egg noodles, such as pancit
1/2 carrot, julienned
1/4 pound (125 g) baby bok choy, bottoms removed, cut on bias
3 scallions, cut into 1/2-inch bias pieces
Directions
For the sauce: Stir together the chicken stock, oyster sauce, soy sauce, cornstarch and sesame oil. Set aside.
For the noodles: Heat a pan to high and add the oil. Once you see wisps of white smoke, add the ginger and garlic and cook until light brown and fragrant, about 20 seconds. Stir in the chicken and cook until medium, about 1 minute.
Add the noodles, carrots and bok choy to the pan and cook until tender, about 1 minute.
Stir the sauce, pour into the pan and incorporate all ingredients well.
Continue to cook until the chicken is cooked through and the sauce starts to bubble and thicken. Transfer to a serving platter, garnish with the scallions and serve immediately.

RECIPE (2 servings)
INGREDIENTS:
1/2 small cabbage
5 green onions/spring onions
2 carrots
300g/11 oz noodles (preferably egg noodles)
4 tbsp oil
—sauce—
1.5 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce (regular or vegetarian)
3 cloves garlic grated
1 tsp sugar
2 tbsp water
METHOD:
1. Thinly slice cabbage, carrots and white part of the green onions/spring onions. Slice the green part into 2 inch thick pieces
2. Mix sauce ingredients in a bowl before hand. This will make it easier while stir frying
3. Boil water and cook noodles 2 mins less than the package instructions. The noodles will cook further while stir frying so it’s important to undercook them
4. Strain the noodles and dunk it into cold water or rinse them until they are cold. This helps making the noodles stop cooking immediately. Strain out excess water and coat in some oil to prevent it from sticking
5. Heat a wok/pan on high heat and add some oil. Add the carrots and stir fry for 1 min
6. Next add the cabbage and stir fry for 1 min
7. Next add the white part of green onion/spring onions and mix well
8. Spread the veggies around the wok/pan so they can get a light char. Once the veggies are done, set it aside
9. Next add some oil and stir fry the noodles for 2-3 mins on high heat. This enhances the taste and gives it a wok tossed flavour. Use chopsticks or tongs to mix the noodles so they don’t break
10. Once the noodles stir fried well, add the veggies and mix well
11. Pour in the sauce and stir fry for 2 mins. Taste and adjust salt if needed. Some noodle brands are saltier than others
12. Switch off the flame, add green part of green onions/spring onions and a few drops of sesame oil. Enjoy!

SUBSTITUTES:
• No scallions/spring onions?
Substitute with 1 small regular onion
• No oyster sauce?
Add 1/2 tsp soy sauce + 1/2 tsp sugar
• No dark soy sauce?
Skip it. It’s mainly added for colour. Your noodles will be a lot lighter without it

TIPS:
• It’s important to not add salt to the vegetables. If you add salt they’ll release too much water and turn soggy
• Stir frying veggies on high heat gives it a light char while keeping it crunchy at the same time
• Different brands of noodles have different levels of salt, adjust the sauce depending taste
• Use Chinese brands of sauces for an authentic taste. I use Lee kum kee sauces in this video

Ingredients: (2-3 servings)
Mei Fun (Thin Rice Noodles): 150 g or 5.3 oz
Eggs: 2 Large
Cabbage: 100 g or 3.5 oz
Nappa: 50 g or 1.76 oz
Carrot: 50 g or 1.76
Celery: 50 g or 1.76 oz
Onion: 50 g or 1.76 oz
Spring Onion: 1
Bean Sprouts: 30 g or 1 oz
Bamboo Shoot Strips: 15 g or .5 oz
Garlic: 1 tbsp (minced)
Sesame Oil: 1 1/2 tsp
Shao Xing Wine: 1 tbsp
Salt: 3/4 tsp
Sugar: 3/4 tsp
White Pepper: 1/6 tsp
Fish Sauce: 2 tsp
Oyster Sauce: 1/2 tsp
Veg. Oil: 3 1/2 tbsp
Seasoning for pork
Lean Pork: 350 g or 12.35 oz
Salt: 1/2 tsp
White Pepper: 1/8 tsp or a sprinkle
Garlic Powder: 1/6 tsp or a couple of sprinkle
Shao Xing Wine: 2 tsp
Water: 1 tbsp
Corn Starch: 2 tsp
Veg. Oil: 1 tsp
