How To make Roast Loin Of Pork with Apricot Glaze
12 oz Package dried apricots
1 3-inch stick cinnamon
1/2 Lemon, seeds removed
1/2 c Water
1 c Apricot nectar
2 T Orange juice
3 T Honey

Bone tips Frenched 1. Remove twice as many dried apricot halves from the package as there are
bones on the roast and set aside. Place remaining dried apricots, cinnamon, the juice from the lemon half, the remainder of the lemon half cut into quarters, and the water in a medium-sized heat-resistant, non-metallic bowl. 2. Heat mixture, uncovered, in Microwave Oven 8 minutes or until apricots are tender. Remove cinnamon stick and lemon peel chunks. 3. Add apricot nectar, orange juice, and honey. Heat, uncovered. in Microwave Oven 2 minutes. 4. Spread glaze over pork loin and heat, uncovered, in a
shallow, heat-resistant, non-metallic baking dish in Microwave Oven about 1 hour or 10 minutes per pound, or until meat thermometer inserted in the thickest part of the meat registers 165?F. 5. While roast cooks, baste meat with glaze. Place thickest section of roast to outside edge of turntable. 6. Allow roast to stand wrapped in aluminum foil 15 minutes. DO NOT PLACE
THERMOMETER OR ALUMINUM FOIL IN MICROWAVE OVEN. 7. Before serving, place two of the reserved apricot halves on each bone tip. Press apricot halves firmly together so they stay in place. Pork should be cooked to well-done.

Apricot Raspberry Jam recipe:
Roast pork is a mainstay. There are a lot of ways to put a nice glaze or crust on the outside of the roast. In this recipe, we use some leftover homemade jam to glaze the pork, using a bit of soy sauce to add salt and try to set up an osmotic loop.
As presented here, the glaze is pretty simple. It could be taken in many different directions. Spices could easily be
added to it, to make it more aromatic and possibly give it a particular regional character.
Leftover roast pork is surprisingly delicious cold, but also can be cut to matchsticks and used in fried rice or wonton soup, or fritattas.
Makes enough for 6-8 people.
Equipment:
• roasting pan or cast iron grill pan
• large mixing bowl
Ingredients:
1 1⁄2 lb pork loin
2-4 cloves garlic
2” thumb ginger it would be hard to use too much
1/4 cup apricot jam or apricot-raspberry, or similar
1 Tbsp soy sauce preferably dark
Procedure:
1. Peel, chop and smash the garlic and ginger.
2. Combine everything other than the pork loin in a large mixing bowl.
3. Mix thoroughly.
4. Add the pork loin to the bowl and cover with the marinade.
5. Optionally, transfer everything to a plastic bag and place in the fridge for at least 2 hours or overnight.
6. To roast: preheat the oven to 450F.
7. Salt and pepper the outside of the roast, over the glaze/marinade.
8. Place in the center of the hot oven, and immediately turn down the temperature to 325F. Roast for 50-60 min.
9. Take the pork out of the oven and let it rest for at least 10 minutes.
10. If the crust seems weak, turn the oven up really high, to 500F, and after 10 min of rest, place the roast back into the super-hot oven for 5-10 min to crisp up the crust.

Ingredients
12.75 oz jar apricot jelly (See Note 1)
1 cup firmly packed brown sugar
1 cup dijon mustard
1/2 tsp ground cinnamon
1/2 tsp ground cloves
Mix all ingredients in a bowl and brush on roasting pork or chicken several times or ham in last 90 minutes of baking, basting several times.
Note
1. Feel free to substitute with peach or orange marmalade, both work well.

What You'll Need:
✓ 2 tablespoons Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker
✓ ½ cup unseasoned bread crumbs
✓ 1 cup apricot preserves, melted
✓ 2 pounds pork loin roast, cut into 1-inch thick slices
Directions:
⁃ Preheat an oven to 350°F. In a bowl, combine the seasoning mix with the bread crumbs. Liberally brush the pork with the preserves, then coat the slices evenly with the bread crumb mixture. Arrange on a parchment-lined baking sheet.
⁃ Bake for 20 to 25 minutes or until an internal temperature of 145°F is reached and juices run clear.
