Beef Rouladen - Delicious Beef Rolls from Germany
Rouladen is a German dish made of beef that is rolled up with bacon, onion, and pickles inside. It is simple to make and only requires a few ingredients. I’ve given this recipe a slight French twist.
First, the beef is pounded thin and then seasoned with salt and pepper. Then spread meat with ½ tbsp Dijon mustard. I used Dijon, but traditionally you would use German mustard. Next, bacon or smoked ham, onion, and pickles are placed on top of the beef before it is rolled up and secured with toothpicks or kitchen twine. The Rouladen is then browned in a pan before being simmered in beef broth until tender.
This dish is typically served with potatoes and gravy. For a French twist, Rouladen can also be made with veal instead of beef. Being French, I like it served with mashed potatoes and green beans.

Rouladen | German Beef Rolls
These beef rolls from Germany, rouladen are quite easy to make and seriously tasty. Rouladen consist of strips of onion and dill pickle wrapped in bacon, mustard and beef. They are baked in a rich gravy. Serve your rouladen with mashed potato, green beans and pickled red cabbage. Delicious comfort food, rouladen.

Instant Pot German Beef Rolls Rouladen/#Recipe455CFF

The ingredients :
-Beef thin slices according to the number of people, usually 2 per person
-Salt and black pepper
-Mustard
Option 1
Bacon + slice of pickled cucumber + onions + carrots (optional)
Option 2
Cold beef slices + pickled cucumber + onions + carrots + celery
Option # 3
Pickle + onion + carrot + celery + garlic + oregano + dry parsley
Cooking twine
Butter
Olive oil
To make the sauce
A tablespoon of butter
1/2 cup onion chopped very small
1/2 cup carrots chopped very small
1/2 cup celery chopped very small
1/2 cup optional red wine
3 cups beef stock
2 cloves of garlic
3 bay leaves
You can add a small cinnamon stick
Starch about 2-4 Tbsp. depending how much liquid you have
Instant Pot : 6 qt
Pressure cooking time : 30 minutes
NPR: 10-15 minutes

Za rolade smo koristili:
Od goveđeg buta šnicle
Senf
Špek nasiječen na šajbice
Krastavci
1 poriluk
Crveni luk
Sol
Biber
Postupak:
Šnicle premažemo sa senfom,posložimo dvije šajbice suhog špeka,
Krastavce narezane na šajbice ili na kockice,crveni luk nasijeckan.
Šnicle smotamo na kraju ih zavežemo sa špagom ili jednostavno propiknemo sa čačkalicama..
U zdijelu dodamo komad masnoga špeka dok ne pusti masnoću,ako nemate špek možete i ulje.
Dodamo rolade te ih prvo stavimo zapeći sa one strane gdje su spajana a zatim i sa druge strane..
Izvadimo na kratko rolade kada su zapečene van te dodamo nasiječenu mrkvu ,korijen celera,te dinstamo desetak minuta na kraju dodamo luk narezan na krupnije kockice,sve zajedno dinstamo dvadesetak minuta.Kada je dinstanje gotovo dodamo koncetrat rajčice te sve zajedno promiješamo..
Vratimo rolade nazad na prodinstano povrće ,podlijemo sa crvenim vinom,kada vino ispari još jednom opet podlijemo sa crvenim vinom kratko prokuhamo te zalijemo sa goveđim temeljcom.
Rolade ne moraju biti skroz potopljene sa temeljcom nego mogu biti malo više od polovice u tekućini,smanjimo vatru te lagano kuhamo otprilike sat i 45 minuta ,tijekom kuhanja rolade ponekad malo okrenuti kuhamo tako dugo dok nam povrće nebude skroz mekano.
To sve možete napraviti i u pečnici ako imate zdijelu za dinstanje koja ide u pečnicu..I to tako da sve napravite kao u videu samo u pečnici na 160C isto kuhati oko 1 sat i 45 minuta..dok povrće ne omekša..
Kada je sve skuhano ,u drugu zdjelicu dodajete umak kroz cijedilo ,te povrće koje se je kuhalo sa roladam,lagonao sa kutlačom ili žlicom izpirjate da dobijete lijepi gusti umak ,začinete po vašoj želji!!..
Slatko crveno zelje..
1 Glavica crvenog zelja
2 Glavice crvenog luka
2 Jabuke
4-5 Lovorova lista
3-4 Klinčića
PRIPREMA
Prodinstamo luk,dodamo jabuke nasijeckane po želji,ja ih siječem na veče kockice.Kada se malo prodinstalo dodamo nasijeckano crveno zelje, lovor list,klinčić,2-3 žlice šećera,prstohvat soli,podlijemo vodom te kuhamo 30 minuta,nakon toga dodamo crveno vino i kuhamo još 15 minuta..
Ustvari gotovo je kada je zelje mekano..
Možete dodati malo đema od borovnice ili 2 žlice meda,jako je ukusno..
Možete jesti sa pire krumpirom a nije loše ni sa tjesteninom..
