How To make Rigatoni with a Thick Mushroom Sauce
1 Tablespoon unsalted butter
1/4 Cup extra virgin olive oil
1 Pound portobello mushrooms
cleaned
2 Cloves garlic :
sliced
1/8 Teaspoon crushed red pepper
1 1/2 Cups chicken broth
1/2 chicken bouillon cube
1 1/2 Tablespoons italian parsley finely chopped
1/4 Teaspoon salt
1 Pound short tubular pasta :
(rigatoni, mezze,
etc. 1/4 Cup parmesan cheese :
grated
1. Sauce: Put butter and oil in a large nonstick skillet. Using the largest holes on a grater, shred mushrooms directly into skillet. Add garlic and crushed pepper.
2. Saute over medium heat until liquid from mushrooms evaporates, about 10 minutes. Add broth and bouilion cube, increase heat to high and cook 10 to 12 minutes for flavors to blend and liquid to reduce somewhat. Remove from heat, stir in parsley and salt. Set aside.
3. While sauce cooks, bring a large pot of lightly salted water to a boil. Add the pasta and cook according to package directions until firm-tender (al dente). Drain well and return to pot. Add mushroom sauce and stir over medium heat 1 minute. Remove from heat, add cheese and toss to mix. Serve immediately.

INGREDIENTS:
1 lb linguine pasta, cook according to package instructions
2 chicken breasts, cut into strips
Seasoning: salt, pepper, garlic powder, and paprika
2 tbsp cooking oil, divided
8 oz sliced mushrooms
1/2 a medium onion, diced
1 garlic clove, minced
1/4 cup white wine
1 1/2 cups chicken broth
2 cups heavy cream
1/2 cup grated parmesan cheese
Fresh parsley for garnishing
Directions:
1. Cook pasta according to package instructions. Reserve 1/2 cup of pasta water.
2. Season chicken breast with salt, pepper, garlic powder, and paprika.
3. Add 1 tbsp of cooking oil to a large pan and cook chicken for 5-8 min. Transfer cooked chicken to a bowl.
4. Add 1 tbsp of cooking oil to the same pan. Add mushrooms. Lightly season with salt and saute for 3-4 minutes.
5. Add onion and garlic. Saute until fragrant.
6. Drizzle white wine and simmer until liquid reduces.
7. Next pour in chicken broth followed by the heavy whipping cream.
8. Return chicken to the pan.
9. Add grated parmesan cheese.
10. Season to taste.
11. Add cooked pasta and toss well. Add pasta water as needed.
12. Garnish with fresh parsley.
13. Enjoy!!

Pasta Alla Norcina - The Most Underrated Pasta. Ever.
Pasta alla Norcina might be the best pasta that most people in America haven't heard of. It consists of pan-seared crumbled sausage in a creamy white wine sauce with a touch of nutmeg. Traditionally this dish uses a mild sausage and is finished with black truffles. To keep it economical I instead used a bit of baby Bellas diced up. I hope you enjoy this pasta alla Norcina recipe!

One of the first dishes I repeatedly tried making since I started cooking as a kid was mushroom Alfredo with pasta. It was my favorite dish every time my family and I went to an Italian restaurant, so I really wanted to learn how to make it myself. The combination of three types of mushrooms really elevates this classic dish and gives it layers of flavors. This version emphasizes the ability of food to feel chef-level while being so simple to make.
Ingredients:
8 oz. rigatoni pasta
2 shallots, finely chopped
½ cup grated Parmesan cheese, plus extra for garnish
3 tbsp. olive oil
8 oz. mixed mushrooms (such as white, portobello, and cremini), cleaned and sliced
2 tbsp. unsalted butter
¼ cup white wine
1 clove garlic, minced
1 ½ cups heavy cream
Salt and black pepper, to taste
For Serving:
2 tbsp. fresh parsley, chopped
Instructions:
1. Cook the rigatoni in a large pot of boiling salted water following the package instructions until al dente. Drain, reserving 1 cup of the pasta water.
2. In a large skillet, heat the olive oil over medium-high heat. Sauté the chopped shallots until translucent.
3. Add the mushrooms and cook until they release their moisture and it evaporates, then stir in the white wine.
4. Add the butter and minced garlic, cooking until the butter melts and the garlic becomes fragrant.
5. Pour in the heavy cream and season with salt and black pepper. Simmer for about 4 minutes.
6. Add the cooked rigatoni and grated Parmesan cheese to the skillet.
7. Toss to combine, adding the reserved pasta water as needed for a creamy sauce consistency.
8. Cook for another 3 minutes, ensuring the pasta is well-coated and heated through.
9. Serve hot, garnished with chopped parsley and additional Parmesan cheese.

1/2 kg chicken thigh
200 grams of mushrooms
150 ml cream

Method:-
- In a saucepan heat Olive Oil and saute garlic, onion, thyme with italian herbs, black pepper and salt.
- Add the chicken and cook for 7 minutes.
- Then add mushrooms and cook until the mushrooms release liquids.
- Pour the cream in batches as required and stir.
- Now add coriander and mix well.
Delicious and Creamy Chicken and Mushroom Pasta is ready to serve!
