Black Forest Cake Recipe | Chocolate Cherry Cake
Try my new version of the famous Black Forest Cake: rich chocolate cake layers with coffee flavor, chocolate mousse with fresh cherries, cream cheese filling with cherry confit inside, and a delicious chocolate ganache on top.This unique cake is sure to be a hit with everyone!
INGREDIENTS
For Chocolate Cake layers:
3 cups (375g ) all-purpose flour
3 large eggs
1 ½ (400g) cup white granulated sugar
⅔ cup (150g) whole milk
1 ⅓ cup (340g) hot coffee
¼ cup (75g) cherry liqueur
1 tablespoon (10g) baking powder
1 teaspoon (7g) baking soda
1 cup (90g) cocoa powder
⅔ cup (150g) vegetable oil
For Cherry Confit:
9 oz (250g) frozen dark sweet cherries, pitted
2 tablespoons white granulated sugar
1 teaspoon ground cinnamon
2 teaspoons gelatin
3 tablespoons water
For Cream Cheese Filling:
9 oz (250g) cream cheese, at room temperature
⅔ cup (150g) cold whipping cream
¼ cup powdered sugar
For Chocolate Mousse:
7 oz (200g) dark chocolate
1 cup (220g) whipping cream
1 oz (2.5 Tbsp or 30g) unsalted butter
2 teaspoon gelatin
3 tablespoons water
5 oz (100g) fresh or frozen cherries, pitted
For Chocolate Ganache:
7 oz (200g) dark chocolate
⅓ cup (85g) heavy or whipping cream
9 tablespoons (120g) unsalted butter
1 tablespoons (30g) honey
PREPARATION
To Make the Chocolate Cake Layers.
1. Preheat the oven to 350°F (180˚C). Line a 7-inch (18 cm) round cake pan with parchment paper.
2. Sift all dry ingredients (flour, baking soda, baking powder, cocoa powder) into the bowl and stir to combine.
3. In a medium mixer bowl, whisk the oil and sugar. Add eggs, and whisk until thick and fluffy.
4. Add the half of dry mixture to the wet mixture. Add the milk, hot coffee and rum. Then add the remaining dry mixture and mix well.
5. Divide batter equally between two prepared cake pans and bake in fully preheated oven at 350˚F for 25-35 minutes, or until a toothpick comes out clean.
6. Remove cake from pan and onto wire cooling racks to cool completely. Then cover with a plastic wrap and place in the refrigerator for 2 hours minimum, or overnight.
7. Using a kitchen scale, to divide the one cake into 2 equal parts.
To Make the Cherry Confit.
1. Sprinkle gelatin into cold water to soften.
2. In a saucepan, combine frozen cherries, sugar and cinnamon. Cook over medium-low heat, stirring, about for 5 minutes. Remove from heat.
3. Add the gelatin and stir until it is completely melted. Cool to room temperature.
4. Pour the Cherry Confit into the prepared 6-inch (16cm) cake pan and put in the freezer until complete solidification (about 2-3 hours).
To Make the Cream Cheese Filling.
1. Beat the cold whipping cream until soft peaks form.
2. Gradually add the whipped cream into the cream cheese, add the powdered sugar.
To Make the Chocolate Mousse.
1. Dissolve the gelatin in cold water and allow it to swell.
2. In a saucepan, melt the chocolate and butter. Remove from heat.
3. Add the gelatin and stir until it is completely melted.
4. Beat the heavy cream until soft peaks form.
5. Fold the chocolate mixture into the whipped cream. Mix with a spatula until combined.
To Make the Chocolate Ganache.
1. Bring the heavy cream to a boil, stirring constantly.
2. Remove from the heat; add the melted dark chocolate, honey and butter.
3. Cover with a plastic wrap and place in the refrigerate for at least 4-6 hours.
To Assemble the Chocolate Cherry Cake (Black Forest Cake).
1. Place one layer of cake on a cake stand or serving plate. Brush generously with coffee.
2. Top with chocolate mousse and spread evenly. Top with cherries and gently press them into the mousse.
3. Place second layer of cake, brush generously with coffee. Top a half of cream cheese filling, then frozen confit and the remaining cream cheese filling.
4. Place third layer of cake, brush generously with coffee.
5. Cover with a plastic wrap and place in the freezer for at least 4-6 hours.
6. Completely chilled cake cover with chocolate ganache and decorate as you wish! (How I decorated this cake watch here )
