Cowboy Beans in the Crockpot Recipe
Ingredients:
2 large cans of Bush's baked beans
1 large onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1/2 cup brown sugar
1/2 cup ketchup
2 tablespoons mustard
1 pound ground chicken
1/2 pound smoked sausage, sliced
1/2 pound smoked bacon, chopped
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons Worcestershire sauce
Salt and pepper to taste
Chicken and Mushrooms in Cream Recipe
Ingredients:
3 chicken breasts, halved
1/2 teaspoon thyme
1/2 teaspoon rosemary
1/2 teaspoon dried parsley
1/2 teaspoon McCormick grill seasoning (or similar)
Avocado oil or any flavorless oil, for browning
1 cup freshly chopped cremini or button mushrooms
2/3 cup white wine or sparkling wine
1 cup heavy cream
Salt and pepper, to taste
Rice, for serving
Roasted Spaghetti Squash with Sausage and Peppers Marinara
Ingredients:
1 spaghetti squash
2 Italian sausages
1 bell pepper (any color), sliced
1 onion, sliced
1 cup mushrooms, sliced
1 jar of marinara sauce
Olive oil for seasoning
Salt, pepper, and nutmeg (dried or freshly ground) for seasoning
Fresh herbs (optional, for garnish)
Apple Dumplings Recipe (adapted from the Pioneer Woman)
Ingredients:
1 can of crescent rolls
1.5 Granny Smith apples
1/2 cup (1 stick) butter
3/4 cup sugar
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon (or more, to taste)
1/2 cup citrus soda (like Sprite or 7UP)
Instructions:
Preheat Oven and Prepare Pan:
Preheat your oven to 350°F (175°C).
Grease a smaller baking pan (8x8 inch or similar size) with butter or non-stick cooking spray.
Prepare the Apples:
Peel and core the Granny Smith apples.
Cut the apples into 6-8 wedges per apple.
Assemble the Dumplings:
Separate the crescent roll dough into triangles.
Wrap each apple wedge in a crescent roll triangle. Start at the wide end of the triangle and wrap towards the point.
Place the wrapped apples in the prepared baking pan.
Make the Sauce:
In a saucepan, melt the butter over medium heat.
Stir in the sugar and vanilla, mixing well until combined.
Add cinnamon to the mixture. Adjust the amount to your taste preference.
Pour the butter-sugar mixture over the apple dumplings in the pan.
Add Soda:
Gently pour the citrus soda around the edges of the pan and into any gaps between the dumplings. Avoid pouring the soda directly over the dumplings to keep the tops crisp.
Bake in the preheated oven for 35-40 minutes, or until the dumplings are golden brown and the sauce is bubbly.
Allow the dumplings to cool slightly before serving.
Serve warm, optionally with ice cream or whipped cream.

Rice and Beans Three Ways | Vegetarian Meals I Cooked My Family This Week
It’s rice and beans week!! This week you can follow along as I cook up three different rice and bean based entrees for my vegetarian family. It might sound boring, but all three dishes had very different flavors. Rice and beans are a great way to eat on a budget, use up produce, and eat yummy food!

Monday: chipotle black beans (I follow her stovetop directions) —
Tuesday: Kidney bean masala — One Pan, Two Plates: Vegetarian Suppers: More than 70 Weeknight Meals for Two (Cookbook for Vegetarian Dinners, Gifts for Vegans, Vegetarian Cooking)
Thursday:
Pan fried chickpeas with quinoa and veggies
Ingredients (4ish servings)
Coconut oil
2 cans chickpeas, rinsed and drained
1 t. Each ground ginger and powdered garlic
Any vegetables (I use onion, bell pepper, and kale)
Feta cheese and lemon for toppings
Dry chickpeas thoroughly, in a salad spinner if available. Heat coconut oil in large sauté pan. Add chickpeas, stirring until all browned, about 10-15 minutes. Pour into bowl, season with salt, garlic powder and ginger. Add more oil to pan, sauté veggies, seasoning with salt to taste. Cook quinoa to package directions, subbing out veggie broth for water if desired. Layer quinoa, chickpeas, and veggies into a bowl, and top with feta cheese and a spray of fresh lemon.
Note: this recipe is so versatile. Use whatever is in your fridge! I love seasoning the chickpeas with paprika (smoked or not) and cumin. Broccolini sautés up quickly and would add a nice dee green to this dish. Skip the feta and top with a dollop of hummus or whole milk Greek yogurt instead. Add a sprinkle of parsley. Experiment and see what works!
