Quick SOUL FOOD DINNER! HAMBURGER STEAK, MAC & CHEESE, GREEN BEANS, SWEET POTATO CORNBREAD, RICE
Let's make a quick full soul food dinner! I will be showing you a few shortcuts to make this meal easier and quicker. I hope you enjoy these ideas. We are making salisbury steak, mac and cheese, green beans, sweet potato cornbread, and rice.

Green beans
1 lb green beans
1/2 lb smoked meat of choice cut small
1/2 onion
1 tsp chicken bouillon
Creole seasoning to taste
* adjust creole seasoning and bouillon after cooking
Mac and cheese
8 oz noodles
24 oz alfredo sauce
16 oz cheeses of choice, a mix of cheddar and mozzarella Is good.
3 tbsp sour cream
Vegeta- to taste
pepper- to taste
1/2 packet sazon tropical
paprika
egg, optional
Note: This can be done on the stove top to be even faster; just heat everything until the cheese melts ( no egg). Also, shredding or pre-shreded cheese is fine. i didnt feel like shredding it, but it will make the mac and cheese creamier if you shred it.
Sweet Potato Cornbread
2 cups cornbread mix
1 cup roasted sweet potato or mashed left over candied yams
1/2 cup brown sugar or up to 1 cup for *sweet* cornbread
1/2 cup sour cream
3/4 cup buttermilk
2 eggs
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 stick salted butter
1/4 tsp salt
* this cornbread is not very sweet even with the brown sugar. This pairs well with a savory meal or chili. But if you really don't like any sugar at all leave it out or just do 1/4 cup.
Hamburger Steak
1 1/4 lb ground beef
onion powder
garlic powder
Magic Meat Seasoning to taste
1 egg
1/4 cup breadcrumbs
1 1/2 tsp worstichire sauce
1 tsp beef bouillon
Note: If you dont have Meat Magic seasoning then use garlic powder, onion powder, salt, pepper, thyme, and oregano to taste. Sorry no measurements for spices I was just eyeballing it.
Gravy
1/2 onion
1 packet beefy onion soup mix
garlic powder ( optional)
1/4 tsp dried thyme
1 1/2 tbsp flour
water
salt/pepper to taste

Making something healthy today for dinner. Trying to get back where I was before. For dinner today I'm eating Tilda Firecracracker brown rice and baked beans and Vegetables. Recorded yesterday Friday 24th April 2020.
Jacques Pepin's Pork with Red Beans and Rice | KQED
In this episode of Today's Gourmet, Jacques Pepin prepares a wonderful menu inspired by his wife's Caribbean roots. The star of this show is a Puerto Rican pork with red beans and rice. This is a flavorful and spicy dish. The beans are marinated with cilantro, jalapeno, fresh vegetables, and pork. The rice is flavored with orange rind, hot pepper flakes, and annatto seed (to give it a rich yellow color).
Jacques makes two different soups in this episode. One is an easy noodle soup that's ready in about 10 minutes. The other is a red bean soup using the leftovers from the main course.
To round out the meal, Jacques recreates one of his wife's childhood favorites: guava paste with mint and cream cheese on toast. This can be served as a snack or a dessert.

Meal Prep - Rice Quinoa Bowl & Black Bean Soup | WW Friendly | More Lime Cooking
RICE & QUINOA BOWL WITH KALE SALAD
Ingredients: For 3 servings
1 Tbsp butter
1/2 cup Uncooked quinoa (rinsed and dried)
1/2 Uncooked rice, we used Basmati
1 3/4 cup Chicken stock, low sodium
Salt
Pepper
1 cup Kale, rinsed in ice water
Radishes, sliced
Cilantro, chopped
Red onion, chopped
Lemon zest, from about half a lemon
Feta cheese, about 1 Tbsp per serving
For dressing: 1/2 Tbsp olive oil and some lemon juice- per serving
Directions:
1. Wash and chop up kale. To lessen bitterness, let sit in ice water while prepping the rest of the dish and rinse just before plating
2. For rice/quinoa blend- add 1 Tbsp butter to pot. Once melted, add in rice and quinoa and season with salt and pepper to taste. Toast rice and quinoa until fragrant
3. Add chicken stock and lemon zest. Bring to a boil
4. Once boiling, reduce to low heat, cover and cook for about 18 minutes
5. Once cooked, fluff up rice/quinoa blend before serving
6. Assemble bed of kale and top with 1/3 of the rice/quinoa blend (about 1 cup). Top with radishes, red onion, cilantro and feta cheese
7. Add optional dressing of 1/2 Tbsp and lemon juice
Per serving:

BLACK BEAN SOUP WITH CHICKEN
Ingredients: Soup makes three servings
10 oz uncooked, boneless, skinless chick breast
18oz Black beans, drained and rinsed
1 Lime
1/4 Red onion
1 1/2 cups Chicken broth
1 1/2 cups Water
Bell peppers- we used 1/2 of each a red and green pepper
Salt, to taste
Pepper, to taste
2 Bay leaves
2 Garlic cloves
Cumin
1/2 Tbsp Olive oil
Chipotle peppers in adobo sauce- used 1 pepper for the soup and some adobo sauce to season chicken
Cilantro, one bunch
Directions:
1. Clean and butterfly chicken. Season to taste with salt, pepper, cumin and some adobo sauce. Cook until reaches internal temperature of 165 degrees Fahrenheit
2. Chop up about 1/4 of a large red onion, half of each a green and red bell pepper, two cloves of garlic, a chipotle pepper and a bunch of cilantro. We reserved the stalks of the chopped cilantro to put in the soup while cooking and saved the leaves for mixing into soup at the end and for garnish
3. To a pot add 1/2 Tbsp of olive oil and add in garlic. Once fragrant, add in the bell peppers and onion and cook until soft. Add in chopped chipotle pepper, the juice from a wedge of lime and season with a pinch of cumin and some salt and pepper to taste
4. Once combined add in the chicken broth, water, bay leaves and black beans. Bring to a boil for about ten minutes
5. To make a bit creamier, we put about half of the soup into a heat safe container and blended with an immersion blender until smooth before returning to pot
6. To assemble meal, serve 1/3 of the pot of soup, top with half the cooked chicken and cilantro
One last squeeze of lime and then serve and enjoy!! =)

MAKING STEAK WITH RICE & BEANS
LET'S MAKE STEAK WITH RICE AND BEANS || Tips for the best steak
1. Rub chicken bouillon powder all over steak instead of salt and pepper
2. Bring steak to room temperature for the best sear
3. Let steak rest before cutting
4. slice into thicker pieces
5. basting with herbs (rosemary, thyme & garlic) infuses the best aroma

Hey Yall, Thanks for tuning in for another video we hope you and your families are well.
Today's video is a fast and easy dinner option. TBH this is the default dinner option in the Cerna Household, Rice, Beans & Chicken. Luis's favorite beans are pink and my favorite are black, but we don't discriminate lol we eat red, pinto, butter etc. Beans are super affordable and a good source of protein.
