There are so many salad ideas you can use, such as varying the ingredients and using different types of rice – from brown, basmati and wild rice. I love this rice salad recipe because it’s really quick to make and tastes really refreshing because it’s a cold alternative.

- 2 Garlic cloves
- Half a washed cucumber
- 150g Cherry tomatoes
- 3 Salad onions
- 20 Black olives
- Handful fresh basil
- 125g Basmati rice
- 1 Lemon

How to make a cold rice salad. Perfectly cooked rice, with chopped salad and homemade Italian salad dressing. Best side dish for the summer, BBQ's, parties or a simple lunch.

Ingredients needed for Rice Salad-
200 grams Long Grain Rice (1 cup) - Can use basmati rice instead
310 mls Cold Water (1 1/4 cup)
Homemade Italian Dressing Ingredients-
5 tbsp Olive oil
½ lemon juice
1 tbsp Italian Seasoning/ Dried Herbs - a mix of Oregano, Thyme, Basil, Parsley, Sage, Red Pepper flakes
2 tsp garlic puree (4 cloves minced)
Italian Salad (this is what we used but get creative and use what you like/have!) -
8 Sundried Tomatoes - Chopped
1 Orange Pepper - Diced
½ Cucumber - Diced
1 Small Red Onion - Diced
100 g Cherry or Plum Tomatoes (¾ cup) - quartered
100 g Sweetcorn (¾ cup)
60 g Green or/and Black Olives (½ cup)
4 tbsp Pine Nuts
3 tbsp Fresh Basil chopped
2 tbsp Fresh Parsley chopped

1. Adapt this simple rice salad recipe to your taste
I made this vegan rice salad with a mix of wild and brown rice. I think this is the best combo because it’s the healthier version of rice and it also has a better texture and nutty flavor.
Brown rice has a much healthier nutrient content than its white version and it’s richer in fiber, vitamins and minerals. So I definitely recommend it but I also understand that it may not always be easily available.
In this case, you can replace it with white rice. Or, you could go for the even healthier options like quinoa, barley, buckwheat or bulgur.
Moving on to the veggies, you can go for any kind you like. Just think about the texture when choosing the veggies and keep in mind to chop them into small bite-sized pieces.
If you want this Thai rice salad to have a crunchy texture, you can make it with peppers, carrots or cabbage.
And if Kale is not easily available you can replace it with baby spinach or romaine salad.
Furthermore, I made this vegan rice salad with cashew because I love their sweet and delicate flavor. But you can replace them with pecans, almonds, chopped hazelnuts or walnuts.
