Turkish Food Recipe - How to make Turkish Semolina Cake Revani
Turkish Semolina Cake, or Revani, is a very simple recipe which you can dress up however you like. Revani is basically a yellow cake made from flour and semolina, which is just a coarse flour made from durum wheat. After the cake has baked, you pour on a sugar syrup, similar to baklava, and top it off with either coconut flakes or your favorite whipped cream.
Ok, I agree, the sugar syrup sounds like a bit much. But once it soaks in to the cake, it turns into a lightly moist cake that is easy to eat without needing a drink to go along with it. This cake has a nice vanilla flavor to it and the semolina gives this cake a nice consistency. It really puts a new spin on the traditional yellow cake. There are all sorts of different varieties though. Some are sprinkled with nuts, coconut flakes, topped with whipped cream or ice cream, and sometimes poppy seeds are added to the cake mix.
INGREDIENTS
2 Cups Sugar =Sugar Syrup
2 Cups Water =Sugar Syrup
3 Eggs *can substitute 3/4 cup mashed bananas or Aquafaba
3/4 Cup Sugar
1/4 Cup Oil
3/4 Cup Plain Yogurt *can substitute vegan yogurt
1 Cup Flour all-purpose
3/4 Cup Semolina Flour
2 tsp Baking Powder
1 tsp Vanilla Extract

Basbousa Recipe | How to Make Basbousa (Semolina Cake)
Basbousa is a traditional Egyptian – middle eastern sweet cake. Basically Basbousa (also known as revani or harissa) cake is a semolina cake with coconut soaked in syrup. This dessert is popular in all Arab cuisines and many other cuisines all over the middle east. Each county has their own version of basbousa, this version of semolina cake is light, fluffy and sweet. This recipe perfect for the Ramadan or any other occasion.

Ingredients:
For the Cake:
1½ cups (270g) Semolina
1/2 cup (65g) Plain Flour
3/4 cup (150g) sugar
1 cup (90g) desiccated/shredded coconut
1/2 cup (115g) Butter, melted
3 eggs
1 teaspoon Vanilla extract
1 cup (230g) Plain yogurt/Sour cream
1 teaspoon Baking soda
1/4 teaspoon Salt
Almonds, blanched or regular
For the syrup:
1½ cups (300g) Sugar
1½ cups (360ml) Water
1 teaspoon Rose water/orange blossom
2 tablespoons Lemon juice
Directions:
1. Preheat oven to 180C (360F). Grease an 9x9-inch (23cm) or a 9-10” (23-26cm) round cake pan with butter.
2. In a large bowl beat egg with sugar until light and pale. Add melted butter, vanilla extract, yogurt, and beat on low speed until incorporated. add semolina, flour, coconut, baking powder and salt. Mix until combined.
3. Transfer the mixture into the pan and spread evenly. Cut a diamond or square design in the cake with a butter knife. Place an almond in the center of each diamond.
4. Bake for 35-40 minutes or until golden brown.
5. Meanwhile make the syrup: in a small saucepan place water and sugar, place the saucepan over medium-high heat until boils. Reduce the heat to medium-low, add lemon juice, rose water and simmer for 10 minutes.
6. Cut the cake again along the pre-cut lines and pour the syrup over the cake while the cake is still hot. Let cool before serving.
Notes:
• Instead of butter you can use canola/vegetable oil.
Easy Turkish Cake Revani / Semolina Cake ( Basboussa )
Revani Semolina cake is a fluffy very light cake made with eggs, semolina, and little flour. In Turkish, we call Revani but it is also well known in middle east countries as Basboussa
We really love this traditional Turkish dessert and serve it especially on Ramadan and in the dinner menu for our guests.
There are many different kinds made with milk or yogurt or with more oil. But because we really like this version I choose this one to share with you. I am really excited. And to show you how easy it is to make my daughter made this dessert for you:)
Ingredients for Revani Semolina Cake:
For the syrup:
1+1/2 cup sugar
2 cups of water
1/2 ts lemon juice
For the semolina cake:
4 eggs at room temperature
1/2 cup sugar
1 lemon or orange rind or vanilla
1 tbsp vegetable oil
1/2 cup semolina flour
3/4 cup all-purpose flour
1 package baking powder (2 tsp)
To serve: about 1/3 cup unsweetened grated coconut
About 20X28cm rectangular or similar medium size pan
Instructions:
For the syrup stir water and sugar in a small pan and heat. After boiling for 5 minutes pour dropped lemon juice boil 30 seconds more. turn off the heat and let it cool.
For the semolina cake:
In a big bowl mix eggs, sugar, and lemon rind until light and fluffy about 4 minutes.
Add oil, then semolina, flour, and baking powder. Mix on low until everything is corporated.
Grease 20 x 28 cm or similar size pan. Pour the cake mixture over and bake in a preheated 170C degree oven until golden brown and risen.
After 5 minutes taking out from the oven pour the cooled syrup slowly and wait until it soaks all of it.
Sprinkle unsweetened grated coconut generously and serve
