REUBEN DIP
INGREDIENTS
8 ounces cream cheese softened
1 1/2 cups corned beef diced or chopped
1 1/2 cups Swiss cheese shredded
1/2 cup sour cream
1/2 cup sauerkraut drained
1/4 cup Thousand Island dressing
2 tablespoons chopped parsley
INSTRUCTIONS
Preheat the oven to 425 degrees F. Coat a small baking dish or skillet with cooking spray.
Place the cream cheese, corned beef, 3/4 cup Swiss cheese, sour cream, sauerkraut and Thousand Island dressing in a bowl. Stir gently until blended.
Spread the cream cheese mixture into an even layer in your prepared dish. Top with remaining 3/4 cup of cheese.
Bake for 15-20 minutes or until cheese is browned and dip is bubbling. Top with parsley, then serve.

Russian Dressing Recipe
(inspired by Makinze Gore @delish)
1/2 cup mayonnaise
3 tbs. ketchup
2 tbs horseradish
2 tsp Worcestershire sauce
1 tbs. sugar
1/4 tsp paprika
Salt and pepper (to taste)
1 medium dill pickle - diced
Wisk all ingredients together in a medium size bowl until consistency is that of a thick dressing! Add salt and pepper to taste.

The Best Dam Rueben Soup is a great break from the usual soups. If you love a Rueben Sandwich, then you will die for this soup. Corn Beef is used in the Rueben Soup, it is a little pricey, but worth every cent. So good, my grandchildren gave it a 10. You can add extra Sauerkraut, I added an extra cup,,,,I also decide to thicken it with flour,,, I am always tweaking my recipes,,, My family raved on and on about how good it was including my grandchildren. This could be used for Keto Recipe, by tweaking it (no potatoes)
Rueben Soup Recipe
Olive Oil with 1/2 stick of Butter
1 Large Onion
1 celery single stalk
2 Tbls Garlic {I corrected amount}
8 Cups Beef Broth
1 lb Corn Beef {Go to Deli}
Sauerkraut 3 Cups {I tweaked this from 2 cups}
1 lb Corn Beef
2 Large potatoes { Cut to 2 inch pieces} smaller the pieces less time to cook
2 cups Half and Half
Sliced Swiss Cheese
Thousand Island Dressing
Rye Croutons
Directions:
Put Olive Oil and Butter in Pan, let it heat up,,
Add onions, cook for 1 minute
Add Celery and Garlic cook for an additional minute
Add 8 Cups of Beef Broth, Let it get Warm, Add the Corn Beef and Sauerkraut,
SIMMER {boiling gently) 30 Minutes
Add potatoes, cook till soft (size of potatoes determine cooking time) 7 to 10 minutes
Before potatoes are quite done add 2 Cups Cream {half and Half} Temper the Cream with the
soup as shown in video {take hot soup by the tablespoon and add to Cream, (5 to 6 TABLS} ADD CREAM SLOWLY TO SOUP, this will keep the cream from curling,, Simmer couple more minutes
Put soup in Bowl ,, TOP: 1 Slice Swiss Cheese, 1 Tablespoon Thousand Island Dressing, Rye Coutons or Rye Bread on the side My Family Gave it a 10, none left

Reuben Soup Recipe
This delicious and hot soup makes for an easy and different St. Patrick’s Day dinner – or use your leftovers from your holiday and make this soup the next day!
Prep Time 10m | Cook Time 60m | Ingredients 11 | Serves 6
Ingredients
1/2 c. Onion, chopped
1/4 c. Celery, chopped
3 T. Butter
1/4 c. Flour
3 c. Water
4 t. Beef bullion powder
1/2 lb. cooked Grobbel’s corned beef, shredded
1 c. Sauerkraut, drained
3 c. Half and Half
3 c. Swiss Cheese
8 Rye or Pumpernickel slices, toasted and trimmed to fit bowls
Directions
1. Prepare Corned Beef following Easy to Prepare Online Video, or Corned Beef Cooking Tips.
2. In a large saucepan over medium heat, melt butter.
3. Add onion and celery and cook until tender.
4. Slowly add flour while stirring constantly until smooth.
5. Gradually stir in water and bouillon, bring to a boil.
6. Reduce heat, simmer uncovered for 5 minutes.
7. Add corned beef, sauerkraut, half and half, and 1 cup of swiss cheese.
8. Cook for 30 minutes or until slightly thickened stirring frequently.
9. Ladle into 8, one cup, ovenproof bowls.
10. Top each with a slice of toast and 1/4 cup of swiss cheese.
