HOW TO MAKE KETO CARROT CAKE
Carrot Cake is my second favorite cake when I need a keto dessert. First is white cake and then comes carrot cake. I created this keto carrot cake recipe with cream cheese frosting because I needed to satisfy my occasional craving for keto cake. This low carb cake recipe is moist and full of carrot & spice flavor.
This low carb carrot cake is made using REAL carrots. Don’t be afraid of carrots on the keto diet. They are loaded with fiber and vitamins. Sure, they might have carbs, but this keto carrot cake recipe on uses 1 cup of shredded carrots for the entire cake!
I topped my keto carrot cake with cream cheese frosting. This keto frosting has a little extra bite to it because I add some sour cream. You can also use plain yogurt. My favorite keto yogurt is the plain yogurt from PEAK YOGURT. Each container has 24 g of FAT and 4 g CARBS and is delicious on it’s own. Visit their site here:

KETO CARROT CAKE
(Make 1 single layer 8 inch cake or 1 double layer 4 inch cake)

1 ½ cup almond flour
½ cup granulated Swerve or sweetener of choice
¼ cup of golden Lakanto monkfruit or golden Swerve
1 ½ teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1 ¼ teaspoon cinnamon
½ teaspoon nutmeg
⅛ teaspoon ground cloves
1 cup loosely packed grated carrots (from one medium sized carrot)
4 eggs
4 tablespoons butter, melted
½ teaspoon vanilla
½ cup chopped pecans
.frosting.
8 oz cream cheese, softened
5 tablespoons butter, softened
1 tablespoon sour cream or plain yogurt
½ teaspoon vanilla
½ cup confectioner’s Swerve
Grease the bottom and sides of one large circle cake pan or two 4 inch pans. Line the bottom with a circle of parchment paper.
Whisk together all the dry ingredients.
Add the carrot, eggs, butter, vanilla to the dry ingredients and mix until combined.
Stir in the pecans.
Scoop batter into prepared pans (fill halfway). Bake at 350 for 22-30 minutes. 22-25 minutes for 4 inch pans and 25-30 minutes for 8 inch. Bake until set in the middle.
Let cool completely before frosting.
For the frosting, whip together cream cheese, butter, vanilla, and sour cream. Slowly add in the confections Swerve and continue to whip for another 2-3 minutes or until fluffy.

Ingredients:
2 eggs
140 g dark muscovado sugar
Zest of one orange
140 g mixed fruit
280 g finely grated, peeled carrots
100 g self-raising flour
130 g plain wholemeal flour
1 tsp baking powder, plus a pinch
1 tsp bicarbonate of soda
2 tsp cinnamon
1/2 tsp salt
1 tsp orange juice
200 g cream cheese
200 g creme fraiche
3 tbsp icing sugar
Vanilla extract
40 g crushed walnuts
Step 1: Prepare the Mix
Separate two eggs, and place the yolks and whites in two separate bowls. Then whisk the egg white until light and frothy and put it to the side.
Add the muscovado sugar and the oil to the bowl with the egg yolks. Mix it until smooth. Add orange zest and mixed fruits. Mix it again. Add grated carrots, then salt. Sift flour in, stir gently. Mix together the baking soda, bicarbonate of soda and 1 tsp cinnamon and sift it into the bowl. After that stir vigorously.
Prepare a greased and flour dusted baking tray. Gently fold the egg white with a metal or wooden spoon in. Try to keep the fluffiness of the egg white.
Pour the mix into the pan. Smooth it over with the spoon. Put it into the pre-heated oven at 180°C for 40-45 minutes.
Step 2: Make the Frosting
While the cake cools down, start with the frosting. Add orange juice to cream cheese and crème fraiche. Also add the vanilla extract. Icing sugar follows with a pinch of cinnamon. Mix it.
Frost the cake with the icing and decorate with chopped walnuts.

Ingredients
Cake:
* 2 1/4 cups whole wheat flour (270 g)
* 3 teaspoons baking powder (*see note below)
* 1 teaspoon baking soda
* 3 teaspoons cinnamon
* 1/2 teaspoon nutmeg
* 1 teaspoon sea salt
* 1/2 cup applesauce (125 g)
* 1 cup oat milk (250 ml) or any type of milk
* 2 teaspoons vanilla
* 1/3 cup honey (100 g) or 1/2 cup sugar
* 1/2 cup melted coconut oil (110 g) or any vegetable oil
* 2 cups grated carrots (2,5 - 3 medium carrots)
* 1/2 cup raisins and chopped walnuts
Frosting
* 2 tablespoons honey (43 g)
* 1 1/2 cup low-fat cream cheese (350 g)
Instructions
1. Preheat the oven to 350°F and grease a 7x11 baking pan.
2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
3. Pour into the bowl the applesauce, oat milk, vanilla, honey and oil.
4. Mix the mixture until just combined.
5. Fold in the carrots, raisins and walnuts.
6. Bake for 45 to 60 minutes or until a toothpick inserted comes out clean. Let cake cool completely before frosting!
7. Make the frosting: combine cream cheese and honey until very smooth, scraping down the sides occasionally.
8. Frost the cake and sprinkle with something.
9. Store frosted cake in the fridge.
