Rum fruit mixture:
Mixed Nuts - 100 gms
Pitted Cherries - 50 gms
Currents - 50 gms
Seedless Dates - 60 gms
Candied Ginger - 40 gms
Prunes - 100 gms
Tutti-frutti - 100 gms
Rum - 60 ml
Orange - 1 no
Spice mix:
Cinnamon - 1 stick
Cardamom - 3 nos
Nutmeg - A small chunk
Sugar - 1 tbsp
Other Ingredients:
Butter - 200 gms
Brown Sugar - 220 gms
Maida - 200 gms
Baking powder - ½ tsp
Eggs - 3 nos
Cooking Instructions:
1. Deseed and chop all the dry fruits and nuts.
2. Grind the whole spices with a tablespoon of sugar.
3. Mix all the dry fruits, nuts, powdered spice, orange zest, and rum together and store it for 1 to 20 days.
4. In a pan melt the sugar, add a little water to it and add all the fruit mixture to it and cook it for 5 mins.
5. After cooking the mixture remove the pan off the flame and add butter to it and let it cool,
until the mixture reaches room temperature.
6. Powder the sugar in the mixer grinder.
7. In a separate bowl add eggs, powdered sugar and beat until fluffy, with the use of a hand mixer.
8. Add sieved flour, baking powder to the egg mixture and also the fruit mixture and mix well.
9. Line a baking tray with parchment paper.
10. Add the mixture to the baking tray.
11. In the preheated oven, bake the cake for 40 mins at 170-degree celsius.

Plum Cake | No Soak Christmas Fruit Cake | Christmas Specials
A plum cake is good for all occasions, but perfect for Christmas! It is simple and the recipe might strike you as a bit different from traditional fruit cake recipes, because it is :) Developed by my daughter, this cake includes dark chocolate and wine which come together to create a flavour so divine and a cake so moist, it is indeed a Christmas Special!
This recipe was requested by many of my subscribers/viewers, so thank you all!
The inclusion of other dried fruits is up to you; I recommend roasting nuts rather than soaking them in wine as they impart a slight bitterness to the wine (which is why I don't add walnuts to the wine). The raisins need to be softened, so prepare a solution of warm water and sugar (about 2 tablespoons) and let the raisins remain completely immersed in that for 20 minutes.
For weight conversions you may refer to this:
100 grams of Dark Chocolate, chopped
100 grams of Prunes, chopped
50 grams of Raisins (seedless; that have been soaked in a warm solution of water and sugar for 20 minutes)
120 ml or 1/2 cup of Port Wine (or any sweet wine)
Heat the wine add the fruits and chocolate, mix and set aside till needed. The period of time till its addition into the batter is sufficient to soak.
40 grams of Walnuts, chopped (not to added to the wine)

Grind the following spices:
1 inch of dried Ginger
1/4 piece of Nutmeg
2 inches of Cinnamon
20 ml Oil
30 grams (or 4 tablespoons) of Cocoa Powder
(make a paste of this with the ground spices)

3 whole Eggs
100 grams or 1/2 cup of Sugar
100 grams or 1/4th cup + 3 tbsp of Salted butter (melted)
120 grams or 1 cup of All-purpose flour
1&1/2 teaspoon of Baking powder
The spices strengthen the flavour of the wine. Their quantities can be adjusted and tweaked to your liking.
Preheat the oven at 160 degrees Celsius for 15 minutes.
Bake at 160 degrees Celsius for 45-50 minutes, or till an inserted skewer comes out clean.
*Once baked, allow the cake to remain in the oven’s heat for 15 minutes, then open the oven door and let it cool gradually. This prevents excess shrinkage/contraction of the cake.
This cake tastes best when allowed to rest.
**When properly cooled, wrap in parchment and cover with a piece of cloth and let it rest overnight (basically, 10 hours or more); this locks up the moisture, allowing the flavour and texture to develop even further. After unmoulding, keep the baking parchment attached to the bottom, it acts as a seal to retain moisture (I took it off my cake for the purpose of the video). It can remain at room temperature for a week to 10 days or more if properly kept in a cool, dark and dry place; to ensure it doesn’t dry/spoil, keep it wrapped in parchment and cloth, allowing it to breathe occasionally.
Further, it can be refrigerated for weeks – just enclose it in two layers of parchment and then double layer of cling wrap after it has cooled completely.

One of the easiest cake I have ever made and yet so delicate and tasty. Must to try! This recipe been posted more than a decade ago in NYT food.
Made without any special equipment and the steps are so easy to follow, you don't need to be a professional baker.
To use plums is original recipe, I have made this cake with nectarine and peaches. So good for the coffee or tea.
Ingredients:
120 g butter ( unsalted) soften
120 g of sugar, can be adjusted to your taste
120 g of all purpose flour
2 eggs ( room temperature)
1 teaspoon of baking powder
pinch of salt
plums 6-8 pieces
1. Preheat the oven to 340°F-350 F(170-180 C). For this recipe use 8-9-inch (20-22cm) springform pan.
2. In a large bowl combine the butter and sugar until light in color.
3. Add the eggs, one by one and mix until well combined.
4. Add the dry ingredients ( flour, baking powder and pinch of salt)
5. Spoon the batter into the pan. Cover the top of the batter with the plum halves or wedges, skin side up. This way all the juice from plum will moisture the cake inside.
6. If the plums are not sweet enough you can sprinkle with sugar, or if too sweet, add little drizzle of lemon juice. Sprinkle with the cinnamon.
7. Bake the plum torte(cake) until the cake is golden and the plums are bubbly, 45-50 mins. Medium rank. Let it rest and cool, then unmold.
Enjoy with tea or coffee!

Christmas is almost here and people across the world are gearing up for the merry celebrations, followed by the big night of New Year's eve. What makes Christmas even more special is the sheer joy of gorging on delectable treats on this day, especially plum cake that makes an important part of the festival. What makes it special is how people begin preparing the plum cake months prior to cooking it. The slightly bitter taste and dense texture is because of the dry fruits that are soaked in rum or brandy for months, opened only closer to the festival when the cake is baked. The aroma of the Christmas plum cake, with its alcohol infused dry fruits and nuts, is simply intoxicating and irresistible.
Christmas Plum cakes are made of either dried fruits like grapes, currants, raisins or prunes or with fresh fruits depending on one's taste and preference along with plums as the primary ingredient. Most people prefer adding rum or brandy infused dried fruits in the cake while some may prefer to bake their cake without any alcohol. But what makes plum a traditional treat during Christmas and why is it considered so special?
