How To make Red Bean"Shepherd's Pie"
1 lb small red potatoes
sliced 1/8" thick
1 tablespoon extra virgin olive oil
2 medium onions :
chopped
2 stalks celery sliced
4 cloves garlic :
minced
1/4 teaspoon black pepper
1 can garbanzo beans drained and rinsed
1 can red beans :
drained and rinsed
1 cup frozen green peas
1 cup sweet green pepper -- chopped
1 can cream of potato soup, condensed
1/4 cup skim milk
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 cup reduced-fat monterey jack cheese -- shredded
Scrub potatoes and thinly slice. Cook, covered, in enough boiling water to cover for 4 to 5 minutes or till nearly tender. Drain. Run cold water over potatoes in colander. Drain and set aside.
In a large saucepan heat oil. Add onions, celery, garlic, and black pepper; cook for 5 minutes or till vegetables are tender. Mash 1/2 cup of the garbanzo beans; add to vegetable mixture along with the remaining garbanzo beans, red beans, peas, sweet pepper, soup, milk, cumin, and coriander. Gently stir to combine.
In a greased 2 quart casserole (with cover), place a single layer of potato slices. Spoon bean mixture on top and cover with remaining potato slices in layers, overlapping if necessary.
Bake shepherd's pie, covered, in a 350 degree overn for 35 minutes. Uncover and top with cheese. Bake 10 minutes more or until cheese melts.
Makes 5 servings.

Shepherd's Pie - Recipe & Collab with Africa Everyday
Shepherd's pie is a firm favourite on the UK menu and is super delicious and comforting. I'm going to make a version of this dish today.

Here's an outline of the ingredients I used:
For the meat layer:
600g mutton or lamb chops
1 large onion
1 clove of garlic
half a cup of plain flour
butter or oil for frying
about a teaspoonful each of fresh or dried thyme, and ground cumin
Stock/bouillon cube
2 or 3 anchovy fillets
handful of dried mushrooms (porcini and others), rehydrated in 1 cup of water
about two handfuls of fresh mushrooms
2 pickled walnuts (or substitute a splash of brown sauce, worcestershire sauce, Branston Pickle, etc)
For the stock pot:
Bones from the mutton chops
Trimmings from all the vegetables (except the potato peels - those tend to just make stock cloudy and less tasty)
Bay leaves, rosemary, sage, thyme
1 clove of garlic, smashed
1 stick of celery, crushed
pinch of salt
1 litre of water
For the potato layer:
1kg potatoes
4 or 5 spring onions/scallions
75g salted butter
half a cup of milk
half a teaspoon of white pepper
1 tablespoon melted butter for brushing
For the extra gravy
1 tablespoon butter
1 tablespoon flour
1 or 2 cups of stock from the stockpot
any pan deglaze from frying the meat
1 teaspoon mint sauce (which is just mint leaves finely chopped in vinegar and sugar

Ingredients for 12 buns:
2 1/2 cups & 2 tbsp/320g bread flour
3/4 cup/178ml warm milk
5 tbsp/60g sugar or 4 tbsp/48g
1/2 tsp/3g salt
10g powdered milk
2 eggs - 1 for dough & 1 for egg wash
1 1/4 tsp/4g active dry yeast or 1 tsp/3g instant yeast
2 1/2 tbsp/35g softened unsalted butter

1.5 lbs Ground Meat (Lamb or Beef is traditional but feel free to use any ground meat or vegan substitute)
2-3 medium sized carrots
1/2 cup frozen corn
1/2 cup frozen peas
2 tbsps tomato paste
1 onion
Fresh Parsley
1 tbsp worcestershire sauce
Fresh Rosemary and Thyme
3 garlic cloves
2 tbsps flour
1 cup beef broth
2 lbs russet potatoes
1 stick unsalted butter
2-3 tbsps sour cream
1/2 cup half & half
salt, pepper, garlic, onion powder
Gruyere or Parmesan Cheese
1 egg yolk
Directions:
Preheat your oven to 400 degrees. Peel, Clean, and dice potatoes. Cover with cold water and boil until fork tender. (salt water)
Mix together half and half, sour cream, and butter over medium low heat. Mash potatoes and slowly incorporate butter and cream mixture. Mix until smooth. Add 1/2 cup parmesan cheese and season to taste. Mix in 1 egg yolk and set aside.
Heat skillet over medium high heat and add cooking oil. Add 1 1/2 lbs ground meat and brown evenly until cooked through. Season with salt, pepper, garlic, and onion powder. Remove with slotted spoon and add diced onion and carrots to the skillet with 1 tbsp of fat from the ground meat. Cook until tender and then add back in the meat. Add garlic and tomato paste and mix to combine. Add worcestershire sauce and fresh herbs. Add flour and mix. Cook 1-2 minutes and then add beef stock. Bring to a simmer and cook for 2-3 minutes until mixture thickens. Reduce heat to low and mix in forzen peas and carrots. Season to taste.
In a large casserole dish, add layer of meat and veggies. Top with thick layer of mashed potatoes and grate fresh cheese on top. Bake at 400 degrees for 30 minutes or until the potatoes are browned.
