Red, White, and Blue Berry Trifle | Everyday Food with Sarah Carey
Happy Independence Day! If you're looking for a treat that's as festive as your celebration, this easy trifle is for you. There's no cooking involved -- just a little mixing, layering, and chilling -- so it's perfect for this sizzling summer weather. Whip it up in the morning, and it will be ready to go for your afternoon party. There's nothing to it!
Sarah's Tip of the Day:
The stars of this dessert, of course, are the fresh seasonal berries. In the video, I'll show you how to bring out their natural juices with a little fresh orange and confectioner's sugar (a technique called macerating). You'll layer the berries with 10 ounces mascarpone cheese and about 24 ladyfingers, which become decadently cakelike after soaking up all the sweet fruit juices. You'll also need an 8-inch springform pan and some parchment paper for this trifle. In the video, you'll see how I use these to make forming and unmolding the cake a snap. So festive, so good!

Recipe Ingredients:
1 1/2 pounds raspberries (5 cups)
3/4 cup confectioners' sugar
1/4 cup fresh orange juice (from 1 large orange)
10 ounces mascarpone cheese (1 1/3 cups)

✅Ingredients
SWEET BISCUIT SHORTCAKES:
• 2 cups all-purpose flour
• ¾ cup powdered sugar
• 1 tablespoons baking powder
• 1 teaspoon salt
• 4 tablespoons cold butter
• ½ cup milk
• ¼ cup heavy cream
BERRIES:
• 2 pints strawberries, hulled and sliced
• 12 oz blueberries
• 1 lemon, zested and juiced
• ¼ cup sugar
WHIPPED CREAM:
• 1¾ cup heavy cream
• 2 tablespoons sugar

1️⃣ Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
2️⃣ 00:13 - In a medium-size mixing bowl, stir together flour, powdered sugar, baking powder and salt. Use a pastry cutter to cut in cold butter until mixture resembles cornmeal. Stir in the milk and heavy cream until a sticky dough forms.
3️⃣ 01:38 - Use a dinner spoon to scoop spoonfuls of dough onto the prepared parchment-lined baking sheet, leaving about 2-inches between each.
4️⃣ 01:53 - Bake in the preheated oven for about 15 minutes, until tops begin to turn a golden brown. Remove from oven and cool completely on a wire rack.
5️⃣ 02:03 - Meanwhile, either combine the berries into one bowl and stir together with lemon zest, lemon juice and ¼ cup sugar, or keep the berries separate and divide the lemon zest, lemon juice, and sugar amongst the different berries.
6️⃣ 03:03 - Whip the heavy cream with 2 TB. sugar using either a hand or stand mixer until the cream forms stiff peaks.
7️⃣ 03:42 - Serve in mason jars or glass cups layering with a biscuit on bottom with cream, then berries, and repeat until jar or glass is full. Alternatively, you can serve a biscuit on a plate topped with fresh cream and berries.

Red White and Blueberry Pie | Memorial Day or 4th of July Treat
Let’s get Patriotic with this refreshing Red White and Blueberry Pie. Oh yeah this pie is made with Red Raspberries, White Cream Cheese, and Fresh Blueberries. This pie is so simple to make and impressive to look at.
Here is the Recipe:
Oh-So-Good Red, White, and Blueberry Pie
For the 4th of July, I made red, white, and blueberry pie.
The recipe:
1 refrigerated pie crust (poke holes in the bottom, bake at 400 degrees for 11 minutes)
1 quart fresh strawberries (divided)
1/2 bag ( 6 ounces) white chocolate chips
8 ounces cream cheese softened
3/4 cup cold milk
1 package (3.3 ounces) of vanilla instant pudding mix
1 1/2 cups fresh blueberries
1 cup thawed, frozen light whipped topping
Preheat oven to 425 degrees. Prick bottom and sides of the pie crust with a fork. Bake 10-12 minutes.
Select 8 strawberries for dipping, cut in half through stem ends. Set aside. Hull and slice remaining strawberries.
Melt white chocolate in the microwave using a microwave-safe dish uncovered on HIGH for 1 1/2 minutes stirring every 20 seconds. If more melting time is needed, watch carefully.
Dip strawberry halves in melted chocolate and place on parchment paper with cut side faced down. Refrigerate until set.
Scrape remaining melted chocolate over the bottom and sides of the pie crust coating evenly. Layer sliced strawberries over the bottom of the crust.
Beat cream cheese until smooth. Gradually whisk in milk until well blended. Add pudding mix and whisk until the mixture begins to thicken. Spread mixture evenly over strawberries.
Arrange blueberries evenly over the top of the pie filling. Pipe whipped topping evenly around the edges of the pie. Place dipped strawberry halves on the whipped topping border.
Refrigerate until ready to serve.
