How To make Ravioli with Sweetbreads I (Filling)
2 ea Sweetbreads, veal, (@ 12 oz)
membrane and connective :
tissue removed 4 oz Veal, shoulder
1/2 sm Onion, halved
2 md Shallots, coarsely chopped
2 ea Garlic, cloves
1/2 ts Thyme, fresh OR
1/4 ts Thyme, dried
1 sm Bay leaf
2 tb Cognac
Salt (to taste) Pepper (to taste) For Filling: ============ Preheat your oven to 400 F. In meat grinder or processor, coarsely grind 4 ounces of sweetbreads, the veal shoulder, onion, shallots, garlic, 1/2 teaspoon of thyme, the small bay leaf, Cognac, and salt and pepper. Transfer mixture to shallow baking dish and bake until firm, about 20 minutes. Cool. Set aside until ready to use. Go on to the next recipe and prepare the Pasta. Crawfish Beignets from Chef Daniel Bonnot
A wonderful twist on New Orleans' traditional little bathers, bits of fried pastry usually consumed with powdered sugar and plenty of strong coffee. Chef Bonnot's version is a hot appetizer, pastry filled with crawfish tails and quick-fried.
Tom Sellers, Michelin star chef from Restaurant Story, creates three recipes
The first dish is a dish that has been on the menu since the opening: scallop with cucumber. Raw scallop marinated and served with balls of cucumber and cumber ash (cucumber skins are charred on Big Green Egg to make an ash which the cucumber is rolled in) the scallops are then served with a horseradish and dill dressing.
The second dish is a Pink Lady apple that is scooped out, filled with shredded raw beef, rye bread and diced apple and then topped with an apple gel and summer truffles served on ice.
The last dish is flower custard: a simple vanilla custard served with flowers.
