How To make Raspberry Peach Pie
-- 2-crust pie dough-chilled 1/3 c All-purpose flour
1 c Sugar
2 c Peaches; fresh or frozen,
Thawed, drained, reserving -juices 2 c Raspberries; fresh or
-frozen, Thawed, drained, reserving -juices 1/2 c Hazelnuts; pecans, or
-walnuts, Chopped 1 tb Rum; (optional)
2 1/2 tb Butter

sugar dissolved in water Recipe by: Nathalie Dupree, Matters of Taste Preheat oven to 375 degrees F. Roll out dough for the bottom crust, and place in a 9 inch pie pan. Trim. Chill. To make the filling, mix the flour and sugar together. Add the drained fruit, nuts, and optional rum. Stir in 1/2 of the drained juices. Toss together with your hands until well mixed. Place the filling in the crust. Dot with the butter. To add a top crust, brush lip of bottom crust with water to adhere. Press on a lattice crust, or top with a full crust, pierced or decorated. Brush with glaze. Bake for 3/4 hour in hot oven, or until crust is golden and juices are bubbling. Variation: Substitute blueberries for raspberries. INGREDIENTS
CRUST
1 1/4 cups whole-wheat pastry flour (see Ingredient Note)
1 1/4 cups all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
4 tablespoons cold unsalted butter
1/4 cup reduced-fat sour cream
3 tablespoons canola oil
4 tablespoons ice water
FILLING
6 cups sliced peeled peaches (6-8 medium, ripe but firm; see Tip)
1 cup fresh or frozen raspberries
2/3 cup sugar, plus 1 teaspoon for sprinkling
1 tablespoon lemon juice
3 tablespoons cornstarch
1 large egg white, lightly beaten, for brushing

PEACH RED RASPBERRY PIE
Prepare 9 unbaked pie shell w/ lattice topping
Preheat oven to 450 degrees F.
4 cups fresh peaches (about 3 pounds) rinsed, dried, peeled & pitted
1 1/2 cups fresh red raspberries (about 6 ounces)
1 tablespoon lemon juice, fresh is best
1 1/2 cups sugar
1/2 cup all-purpose flour
1/4 teaspoon nutmeg
1/8 teaspoon salt, optional
2 tablespoons butter, cut into small cubes
1. In small mixing bowl. Add sugar, flour, nutmeg and salt. Whisk together. Set aside.
2. In large mixing bowl. Add peaches & red raspberries. Drizzle lemon juice over fruits and toss with two forks. Add sugar mixture; continuing to toss until fruits are just coated.
3. Evenly add sugar coated fruits into unbaked pie shell. Arrange cubed butter on top of fruit. Finish pie with a lattice or solid pie dough topping. Be sure to make vents in solid pie dough topping (venting allows steam to release while baking).
4. Bake in 450 degree F. preheated oven for the first 10 minutes. Reduce oven temperature to 350 degrees F. (without opening oven door) continue to bake for an additional 45-50 minutes of until bubbly around edges of pie.
5. Cool baked pie for 3-4 hours (or more) on cooling racks before serving!!
