Chef Gary's Eggnog French Toast part 1
Chef Gary joined Tyler Ryan on Good Day for a special Christmas breakfast.
1 cup prepared eggnog (can use light version if you like)
3 eggs
1/4 teaspoon eggnog extract (optional)
1/2 teaspoon almond extract
6-10 slices bread ( I like cinnamon raisin )
Finishing: maple syrup or butter and powdered sugar
Heat griddle or large frying pan on low. (If it is nonstick, you may not need any grease.)
Pour milk into a 4-cup measuring cup. Add eggs, extract and nutmeg. Whisk well to combine. Pour into a rectangular baking dish (7×11-ish) or large pie plate.
Submerge two pieces of bread side by side in eggnoggy liquid, moving them around with your fingers to make sure they are covered. After a minute or so, turn bread over by hand and submerge again.
After about two or so minutes total in the egg bath, bread should be pretty soggy. If it isn't (perhaps because it was very dry to start with), let it soak a bit longer.
If griddle is nonstick, you probably won't need any grease. If it isn't nonstick, melt a little butter on the hot skillet. Place egg-soaked bread on hot griddle (and immediately put two more pieces of bread into the egg wash, to keep your momentum going).
Cook French Toast 1-2 minutes, and then, using a spatula, flip each piece over and cook another 1-2 minutes on the second side. Do the finger-poke test to make sure it is done -- poke the bread with your finger and if it is squishy in the center, let it cook longer. If it is slightly firm, it is done.
Remove cooked toast to plate, and serve with real maple syrup or butter and confectioner's sugar.
Serves 6-10 (depending on how much bread is used).

Ingredients:
-1 1/2 cups eggnog
-5 large eggs
-1/2 tsp ground nutmeg
-1 oz rum @CaptainMorganUSA
-1 loaf brioche bread, cubed @traderjoes
-1/2 tsp cinnamon
-3 tbsp butter
For Topping
-1 tbsp cinnamon
-1 tbsp brown sugar
-1/2 cup chopped almonds, toasted
-Strawberries
-Blueberries
-Powdered sugar
-@traderjoes maple syrup
DIRECTIONS
1. Whisk together eggs, eggnog, nutmeg, rum, and 1/2 tsp cinnamon until well blended.
2. In a large griddle over medium heat, melt butter. Dip bread cubes into mixture, coating each side. Transfer to buttered griddle & cook both sides until golden brown.
3. In a separate bowl, mix together 1 tbsp cinnamon, brown sugar, and toasted almonds for topping.
4. Transfer hot French toast bites to bowl and toss in topping mixture until coated.
5. Top with fruit, powdered sugar, and syrup! Enjoy ????

Ingredient list -
Cinnamon Raisin Bread
5-6 cups AP flour
1/4 cup butter
1 1/2 tbs active dry yeast
1/3 cup sugar
1 1/2 tbs salt
1 tbs cinnamon
3/4 cup warm water (105 - 115 degrees)
1 1/4 cup warm milk (105 - 115 degrees)
1 cup raisins tossed with flour
2 eggs
Egg wash (1 egg beaten with 1 tbs water)
Cream Cheese Frosting
4 oz cream cheese - softened
1/4 cup butter - softened
2 cups powdered sugar
1 tbs vanilla paste or extract
French Toast
4 slices cinnamon raisin bread
