How To make Raisin Brown Bread
2 c Whole wheat flour
1 1/2 c Sifted all-purpose flour
1 ts Salt
1/2 c Molasses
2 c Buttermilk or sour milk
2 ts Baking soda
1 c Raisins
Mix the flours and salt in a bowl. Combine molasses, baking soda and sour milk or buttermilk and add to the mixture. After beating it until smooth add the raisins. Bake in a greased loaf pan for 1 hour at 350F. Serve with baked beans. Source: Heritage

Fragrant Cinnamon, Oatmeal & Raisin Bread Recipe
Just thinking about this oatmeal, cinnamon, and raisin bread makes me hungry. The perfect sweetened breakfast snack. And it’s kind of healthy too, so it should fit right in with the New Year’s resolutions. It may be a simple recipe, but it packs a punch of flavour. The aromatic cinnamon, sweet honey and oats work together perfectly with the raisins and whole wheat flour. Savoury and sweet – the best of both worlds.
This makes the best toasted sweet sandwiches. Bananas, Nutella, jam and/or peanut butter – it’s all good. But if that is not to your taste, then it will work just as well with butter and cheese. Like the Caribbean Bun & Cheese I made a while back.
You may glance at the ingredients and think – that looks like a lot of yeast. And you’d be right. There is a good reason for it though and I only learned this recently. Cinnamon significantly slows down fermentation because it contains a chemical compound (cinnamic aldehyde) which impairs the yeast’s activity.
Other spies such as mace, allspice, and nutmeg will have the same effect. And I was wondering why my hot cross buns were taking so long!
Other than that, it is a pretty standard bread. You can make it as a free-standing loaf, or you can proof and bake it in a tin. The dough can also be divided into smaller rolls.

Homemade Irish Soda Bread with Raisins (Brown Bread)
This 6-ingredient traditional Irish soda bread with raisins is bursting with flavor and comes together in under 1 hour.
Irish soda bread is simple to prepare bread that uses baking soda as a leavening agent to help it rise. It has few ingredients and bakes in under 45 minutes for an incredibly flavorful loaf. Soda bread typically is very dense and heavy, which will fill you up quickly.
In Ireland, soda bread is better known as brown bread and uses a combination of whole wheat and unbleached white flour. You can do a simply 50/50 split between the flours or a 25/75 of whole wheat to white flour, which is what I did.
Ingredients for this recipe:
• 3 cups all-purpose flour
• 1 cup whole wheat flour
• 1 teaspoon baking soda
• 1 teaspoon sea salt
• 2 cups buttermilk
• 1 egg
• ¾ cup raisins
Serves 8
Prep Time: 5 minutes
Bake Time: 40 minutes
Procedures:
1. Preheat the oven to 400°.
2. In a large bowl sift together the flours, baking soda, and sea salt, and then whisk until combined.
3. Form a well and add in the buttermilk and egg and whisk until the egg is mixed into the buttermilk.
4. Pour in the raisins and then using your hands mix all of the ingredients together to form a dough.
5. Transfer the dough to a clean surface dusted with flour and form it into a ball.
6. Place the dough onto a cookie sheet tray lined with parchment paper and slightly flatten it, so that it’s about 2” to 3” thick.
7. Using a knife make two slices about ¾” deep forming a cross.
8. If you want, you can sprinkle on 1-2 tablespoons of turbinado or coarse sugar at this stage.
9. Bake at 400° for 35-40 minutes or until browned on top and cooked in the center.
10. Cool to room temperature before slicing and serving.
Chef Notes:
Make-Ahead: You can make this bread up to 1 day ahead of time.
How to Store: Cover and keep at room temperature for up to 3 days. You can cover it and keep it in the refrigerator for up to 5 days. This bread will freeze well covered for up to 3 months. Thaw it in the refrigerator for 1 day before serving.
If you do not have buttermilk, you can make it by whisking together 1 tablespoon of white vinegar or lemon juice with 1 cup of whole milk.
The bread should reach 195° internally when finished.
If for some reason your dough is a little dry, add in 1-2 tablespoons of water, or simply wet your hands, while mixing the dough together.

RECIPE: Whole Wheat Raisin Bread
INGREDIENTS:
1 1/2 - 2 cups raisins
2 cups soy or almond milk
5 teaspoons instant yeast
1/4 cup grapeseed or canola oil
1/3 cup honey
1 1/2 teaspoons vanilla extract
6 cups whole wheat flour
2 tablespoons flaxseeds
2 teaspoons Kosher salt
Cooking spray
INSTRUCTIONS:
1: Soak the raisins in water for about 30 minutes.
2: Spray two 4 1/2 x 8 1/2 loaf pans with cooking spray.
3: Microwave the milk for 1 minute to warm.
4: Add the milk and yeast in a bowl for 5 minutes or until the yeast is foamy.
5: Whisk in the oil, honey and vanilla.
6: Drain the raisins. Stir the raisins in the liquid mixture.
7: In a separate large bowl, stir together the flour, flaxseeds and salt.
8: Slowly stir in the liquid mixture. Knead well for about 5 minutes.
9: Separate the dough into two equal balls. Set them on a floured surface and shape them into loaves.
10: Place the shaped dough into the loaf pans. Cover with a lightly damp cloth. Let the dough rise in a warm place until it doubles in size.
11: Bake in a 350 degree preheated oven for 25 to 30 minutes.
12: Cool bread on a wire rack. Slice as desired.
NOTES:
You can use another type of salt if preferred.
Use regular milk if desired.
Use white whole wheat flour for a little whiter, lighter and sweeter bread. White whole wheat flour is another healthy whole grain flour.
