How To make Raised Doughnuts
5 cups all-purpose flour
1/2 cup sugar
1 teaspoon salt
2 packages active dry yeast
1 3/4 cups very warm milk (120F to 130F)
1/3 cup shortening
2 eggs
Vegetable oil Sugar
Mix 2 cups of the flour, sugar, salt and yeast in large bowl. Add milk, shortening and eggs. Beat on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in remaining flour until smooth. Cover and let rise in warm place 50 to 60 minutes or until double. (Dough is ready if indentation remains when touched.) Turn dough onto generously floured surface; roll around lightly to coat with flour. Flatten dough with hands or rolling pin to 1/2-inch thickness. Cut with floured doughnut cutter. Push together scraps and gently knead 2 or 3 times. Flatten dough to 1/2-inch thickness; cut with floured 3-inch doughnut cutter. Cover doughnuts and let rise 30 to 40 minutes or until double. Heat oil (1 1/2 to 2 inches) in Dutch oven to 350F. Slide doughnuts into hot oil with wide spatula. Fry about 1 minute on each side or until golden brown. Remove carefully from oil (do not prick surfaces); drain on paper towels. Roll or shake in sugar.
YIELD: about 2 dozen doughnuts

For the doughnuts...
35g butter
35g vegetable shortening
375ml warm whole milk
75ml warm water (35-45*C)
3 tsp quick yeast
50g caster sugar
1.5 tsp salt
1/2 tsp nutmeg
1/8 tsp mace
2 lg eggs
1/2 tsp vanilla extract
660g strong white flour
2-3 litres vegetable oil for frying
Glaze...
400g sifted icing sugar
2 tsp golden syrup
pinch salt
drop of vanilla extract
90ml boiled water

????Bread Flour is another type of flour that has higher protein which produces more gluten, results a higher dough rise & becomes more elastic than what All Purpose Flour can have.
????For some will find the dough too wet, add up flour if it needs it. Dough consistency varies on some factors like absorption quality, protein amount and type of the flour, fat content of the milk, and size of the egg.

1 cup warm milk (fresh or evap) [240 ml]
1 egg
1/8 cup sugar [or 2 tbsp/30 grams]
2 tsp instant yeast
2 & 3/4 cups bread flour or apf [352 grams]
1/2 tsp salt
2 tbsp margarine/butter
powdered or granulated sugar (for dusting/coating)

Easy No Yeast Donuts recipe :
- 140g Self Rising Flour ( 1 cup )
- 190g Any Plain Yogurt ( 6.5 ounces + 1/2 tbsp )
SUBSTITUTES:
**Yogurt can be substituted for milk BUT add only 112 grams of Milk ( 1/2 cup )
**Self rising flour can be made TWO ways:
- 140 grams of plain flour + 1 1/2 tsp baking powder ( 1 cup + 1 1/2 tsp baking powder)
- 140 grams of plain flour + 1/2 tsp baking soda ( 1 cup + 1/2 tsp baking soda)
Glaze for Donuts :
- 250 gr Powdered Sugar ( 2 cups)
- 75 gr Butter ( 2/3 Stick )
- 3-4 tbsp Milk depending how thin you like your glaze
- 1 tsp Vanilla
- Cocoa Powder or Melted Chocolate

This week on Basics we're taking a look at donuts. We're whipping up a mess of jelly and cream filled donuts and also taking a look at the lesser-known sour cream donut.

+ For the yeast donuts:
1 cup whole milk
1 tsp granulated sugar (for the yeast)
1 packet active dry yeast
350g all purpose flour
75g white sugar
1 tsp table salt
3 large egg yolks
Additional flour for work surface
Vegetable oil
Additional sugar (optional for coating)
+ For cream filling:
3 large egg yolks
1 whole egg
85g white sugar
30g corn starch
Dab of vanilla paste
2 cups whole milk
+ For the chocolate glaze:
4 ounces chopped chocolate
1/4 cup whole milk
Dash of instant espresso powder
2 Tbsp corn syrup
+ For jelly filling:
Seedless jam of choice (I used raspberry)
+ For the sour cream donuts:
600g cake flour
1.5 Tbsp baking powder
2 tsp table salt
5 egg yolks
250g white sugar
2.5 Tbsp unsalted butter
380g sour cream
Additional flour for work surface
Vegetable oil for frying
+ For classic donut glaze:
400g powdered sugar
2 tsp light corn syup
1/4 cup boiling water
