With only 5 easy to find ingredients, you can make this Spanish inspired pepper boat too! I'll include many optional items for you in case you also have them in the garden or refrigerator.
Here is what you will need:
Sweet Peppers
Chorizo Sausage (smoked/dried would be best as it is Spanish, but I used Mexican in the video because I could not find the smoked)
Manchego Cheese (I get it at Trader Joe's)
Tomato Sauce
Yellow Rice
Optional
Cilantro, Spanish Olives, Scallions, Lime, Smoked Paprika, & Sour Cream

How to make Beef Stuffed Rainbow Peppers

Ingredients & Resources:
1 pound (454g) organic grass fed beef (Grounded)
4-5 rainbow peppers
1/2 cup chopped fresh parsley
1 cup home made rainbow cherry tomato sauce (or pre made tomato sauce)
1 fresh avocado
3 tbsp. flaxseeds (grounded):
2 tbsp. almond flour
1 tbsp. honey (optional)
1-2 inch fresh ginger root (blended)
1/2 tsp. pink salt
2 tsp. black pepper
Turmeric/garlic/onion (optional)

Rainbow Bell Peppers Recipe
Rainbow Bell Pepper Boats
Ingredients:
2 cups brown rice
4 medium bell peppers (any color)
2 cups kale (destemed and chopped)
1 can 15 oz low sodium garbanzo beans
(chick peas)
½ cup walnuts (chopped)
¼ teaspoon salt
½ teaspoon pepper
Directions:
1. Preheat oven to 375 degrees.
2. Cook rice according to package directions.
3. Slice bell peppers in half and remove seeds.
4. Mash half the can of garbanzo beans with a
fork.
5. Mix cooked rice with kale and mashed
garbanzo beans.
6. Add the nuts, salt, pepper and whole
garbanzo beans.
7. Fill peppers with mixture; place peppers in
baking dish and cover.
8. Bake 30 minutes. Remove cover and bake 5
more minutes.
9. Serve warm!
Makes: 4 servings
