Ingredients:
Rack of Lamb
1 Cup of Seasoned Bread Crumbs
1 Cup of Parmesan Cheese
1 Cup of Chimichurri
Dijon Mustard
Herbs (Rosemary, Thyme,
Seasonings (Himalayan pink salt, fresh black pepper)
Instructions:
- First, take your rack of lamb, and score the meat diagonally on the fatty side.
- Then season both sides with Himalayan pink salt and fresh black pepper.
- Now in a blender, add your seasoned bread crumbs, rosemary, parmesan cheese, chimichurri, and blend.
- Spread the mixture out on a baking sheet.
- In a cast iron pan, sear the rack of lamb on both sides, starting with the meat side.
- In the pan, lay down a bed of thyme under the meat as it cooks, also adding butter.
- Continually baste the meat with the butter in the pan.
- Now grill in the oven at 400 °F for about 5 minutes.
- Once out of the oven, cover the rack of lamb with dijon mustard.
- Then encrust the entire rack of lamb with your mixture on the sheet pan.
- Put it back in the oven at 475°F for about 5 minutes, and you're done!
