This dish is beyond simple to make and in 30 minutes or less you will be sitting at the table enjoying a yummy family meal. Cook the Quinoa following the package directions, cook and season all of the veggies, and mix together. Pour all of the ingredients into a dish and pop in the oven for around 30 minutes.
Don’t be afraid to Mix-In whatever your heart desires. Whether that bacon, more cheese or shredded chicken. Go for it!
All about Quinoa- Quinoa is actually a seed from a week-like plant called goosefoot which is closely related to spinach and beets. This small seed has a nutty flavor and fluffy texture that is creamy and slightly chewy all at once.

Quinoa and Broccoli Casserole Easy & Cheesy Recipe!
A hearty and cheesy casserole stuffed with quinoa and broccoli. Simple yet satisfying served as a side or main dish.

Ingredients
½ c dried quinoa {cooked to a 2:1 ratio}
1 tb unsalted butter
1 tb unbleached flour
1 c warm whole milk
1 c freshly shredded cheese {I used an aged cheddar} with some reserved for topping
1 c chopped broccoli
Instructions
First, rinse and drain the quinoa to wash away the bitter outer shell. You can either cook it on the stovetop or in a rice cooker. For ½ cup of quinoa, I used 1 c chicken stock.
In a pan, melt the butter, low and slow.
Whisk in the flour for 1-2 minutes to draw out the raw flour taste and slowly pour in the milk {you can also use stock}. Bump up the heat to medium and whisk constantly to prevent lumps. As it cooks, it will thicken.
Stir in the cheese and broccoli.
Transfer to a casserole dish, cover with more cheese then foil, and bake at 350 for 20-30 minutes.

Four Can Quinoa Casserole
Four Can Mexican Casserole is an easy Mexican casserole recipe you're going to want to try. The four cans contain corn, diced tomatoes, green chiles, and black beans. After boiling and shredding the chicken, mix it with the contents of the cans and bake. Oh - this recipe uses quinoa, too. Quinoa:
1 cup (170 g) quinoa
2 cups (480 ml) vegetable broth or water (with salt)
1 cup (240 ml) dairy-free milk
1 15 oz can chickpeas rinsed and drained
1 tsp onion powder
1 tsp oregano
3/4 tsp paprika
1/2 tsp sea salt
Black pepper to taste
Broccoli:
1 medium-sized head of broccoli
1 tbsp oil
A pinch of salt
Homemade breadcrumbs:
3 tbsp oats (gluten-free if needed)
1 tbsp nutritional yeast
1/2 tsp onion powder
1/2 tsp paprika
A pinch of turmeric
1 tsp soy sauce (gluten-free if needed)
A pinch of smoked paprika
Salt and black pepper to taste
1 tbsp oil
Vegan Cheese:
1 batch (200 g) vegan cheese sauce or 7 oz (200 g) of store-bought vegan cheese
