How To make Pumpkin Orange Cake
2 1/2 c Flour
2 ts Pupmkin pie spice
1 1/4 ts Baking powder
3/4 ts Baking soda
3/4 ts Salt
1/2 c Butter or margarine; soften
2 c Sugar
3 Eggs
16 oz Libby's Solid Pack Pumpkin
1/2 c Orange juice concentrate;
- thawed 1 tb Grated orange peel
GLAZE:
1 c Powdered sugar
2 tb Orange juice
1/4 c Walnuts; chopped (opt)
Combine flour, pumpkin pie spice, baking powder, baking soda and salt in a small bowl. Beat butter and sugar in large mixer bowl until crumbly. Beat in eggs, pumpkin, orange juice concentrate and orange peel. Beat in flour mixture. Pour into greased and floured 13x9" pan. Bake in preheated 350~ oven for 40-45 minutes or until wooden pick inserted in center comes out clean. Cool completely on wire rack. Spread Glaze over cooled cake; sprinkle with nuts. GLAZE: Combine 1 cup sifted powdered sugar and 2 tablespoons orange juice in small bowl; stir until smooth. -----

How To Make Pumpkin Puree -
INGREDIENTS:
130g all purpose flour
2 tsp baking powder
¼ tsp salt
2 large eggs
100g sugar
130g pumpkin puree
40 ml canola oil
1 tsp orange zest
1 tsp vanilla extract
Orange gel food coloring (optional)
NOTES:
* Before making the cake batter make sure that all the ingredients are at room temperature.
* To add more fall flavor you can also add some cinnamon, clove, nutmeg, and allspice!
* You can make the pumpkin cake ahead of time and keep it in the freezer until you're ready to assemble the cake. Wrap the cake with plastic wrap first and freeze it in an airtight container. Thaw it on the counter top and assemble the cake only once the cake has reached room temperature.
* To make an 8-inch (20 cm) cake, multiply each ingredient by 1.55

This super moist and easy pumpkin cake recipe is full of spiced pumpkin goodness, with a tender crumb that melts in your mouth. To make it even better, it's topped with a cinnamon spiked cream cheese frosting that really takes this cake to another level!
INGREDIENTS:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
Pumpkin Cake
▢2¼ cups (270 g) flour - plain, all purpose flour
▢¼ cup (25 g) cornstarch - also known as cornflour in some countries
▢2 tsp baking powder
▢½ tsp baking soda
▢½ tsp salt
▢2½ tsp ground cinnamon
▢1 tsp ginger powder
▢½ tsp ground nutmeg
▢½ tsp allspice
▢¼ tsp ground cloves
▢1½ cups (300 g) white granulated sugar
▢3 large eggs - room temperature
▢1 cup (200 g) unflavoured vegetable oil - I use canola oil
▢1¼ cup (300 g) pumpkin puree - I use Libby's 100% canned pumpkin (see note 1 on blog post for fresh pumpkin option)
▢¼ cup (60 g) milk - full fat, room temperature
▢2 tsp vanilla essence/extract
▢1 tsp white vinegar
Cinnamon Cream Cheese Frosting
▢¾ cup (170 g) unsalted butter - room temperature
▢3¼ cups (400 g) icing sugar - also known as powdered/confectioners sugar
▢1 heaped cup (250 g) cream cheese - cold
▢1 tsp vanilla
▢½ tsp ground cinnamon

This blood orange upside down cake is super easy to make and you'll be shocked when it pops out of the pan fully decorated and stunning. This cake is the perfect mate for either a big dollop of whipped cream or a nice scoop of ice cream so temper it's citrusy zing. I candied my oranges in two batches, one for the navel and one for the blood. This way the colors stayed as crisp as possible but this is an optional step it you want to wash less dishes and speed the process up.
