Puff Pastry How-To: Shells Recipe
Watch our how-to technique video for a demonstration of how to make a shells recipe.
Patty Shell
Patty shells, also known as Vol a Vent shells can be made in circles, squares, triangles or rectangles. Most commonly, they are made in circles but can easily be made into the other shapes mentioned here. This circular one is well suited for sweet or savory uses and can also be made much larger. The purpose of the puff pastry garnishes will vary, depending on the intended uses. In this case I also cut a 3 by 5 inch rectangle to bake and use as a partial enclosure for an asparagus, gorgonzola, mushroom and tomato appetizer. There are many ways to cut, bake and use the different puff pastry garnishes. Cutting small crescents which are known as “flurons” and small circles or sticks are great soup and sometimes main dish garnishes.
