How To make Poulet En Casserole
1 ea Broiler-fryer (about 3 lbs)
1 x (I usually just use chicken
2 T Vegetable oil
2 T Butter or margarine
2 ea Cloves garlic, minced
12 ea Whole white onions, peeled
12 ea Small white potatoes, pared
4 ea Large carrots, pared and qua
1 c Dry white wine
2 t Salt
1 t Leaf rosemary, crumbled
1/2 t Freshly ground pepper
1 cn Condensed chicken broth
1. Wash and dry chicken; skewer neck skin to back; twist the wing
tips flat against skewered neck skin; tie the legs to tail with kitchen string. 2. Heat oil and butter or margarine with the minced garlic in a 12
cup flame proof casserole or a large kettle. Brown chicken in the hot fat; remove. 3. Saute onions, potatoes and carrots in drippings; remove and
reserve. Stir wine, salt, rosemary and pepper into casserole and bring to boiling, scraping up all the cooked on juices from bottom of casserole; stir in chiken broth; return chicken to casserole; surround with browned vegetables; cover. (If using a kettle, place chicken in a 12-cup casserole; surround with browned vegetables; pour sauce over; cover.) 4. Bake in moderate oven (350 degrees) 1 hour, basting several times
with casserole juices, or until chicken is tender. Garnish with a bouquet of parsley and serve with a chilled white wine, such as Chablis, and chunks of crusty French bread if you wish. (I usually serve over hot steamed rice.) Serves 4. Source: Family Circle "301 Splendid Casseroles", January 1976

Baked Chicken Parm
Chicken Parmigiana (pollo alla parmigiana) that is absolutely incredible with no frying required. My mom bakes it so that it’s a very easy one pan meal that can be made in the same baking dish. We use our own homemade sauce that we jar ourselves ( and make sugo ) but you can get any marinara sauce you love. I personally love @raoshomemade if we are not making our own because it’s really clean in ingredients. You are also more than welcome to use any cheese you love or have on hand. Provolone is a nice option too. You will need:

3 chicken breasts ( ours were big so we cut them in half ) or use 5 smaller/thinner ones
1/3 cup all-purpose flour ( or any )
2 medium eggs
1-1.5 cups italian breadcrumbs
drizzle of olive oil on each one
1-1.5 cups marinara ( any )
mozzarella on each one
1/4 cup parmigiano reggiano

Please note : your cutlets can be semi-fried in a pan or even air-fried too. Our chicken breasts were very thick so we cut ours in half but if you have smaller thinner chicken pieces you can pound them a little or leave them whole. Feel free to use provolone as well.

1. Start by breading your chicken by dipping each side into some flour , then eggs ( shaking off the excess ) and then breadcrumbs on each side. Line them all up in a baking dish ( ours was 9 by 13 ) and drizzle each one with a touch olive oil. Bake in a pre-heated 400F degree oven for 15 minutes. Take them out and remove your cutlets ( you can even let it cool a bit because the dish will be very hot ). Add marinara sauce to the bottom of the dish and arrange your cutlets back into the same dish. Add more sauce on top of each one and your cheeses of choice. Bake again uncovered for 30-35 minutes or until the cheese is melted and golden. Basil or parsley for garnish is totally optional. Enjoy, and don’t forget to follow me for more.

This recipe celebrates the fresh herb tarragon. we use it today to make a classic French dish called poulet a l'estragon (chicken in tarragon sauce). Get the recipe:

1 medium size chicken (cut into 6 pieces)
50 ml of cognac
200 ml (0.8 cups) of dry white wine ( I used a Loire valley sauvignon blanc)
200 ml (0.8 cups) brown chicken stock
200 ml (0.8 cups) cream (heavy whipping cream)
1 carrot (cut in medium size cubes)
1 branch of celery (cut in medium size cubes)
1 large shallot (cut in medium size cubes)
1 good bunch of fresh tarragon. ( at least to have 4 tablespoons of chopped tarragon leaves and all the stokes)
Salt and pepper to season the chicken
2 tablespoons plain flour ( to dust the chicken)
2 tablespoon of oil to sear the chicken.
1 tablespoon of butter to cook the garnish.

Ingredients:
4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano

1/3 cup (90ml) double (heavy) cream
