How To make Pot Roast Under Pressure
1 Chuck roast or steak 3-5 lb.
1 1/2 c Beef stock or 1 can beef
-broth 1 Carrot
1 Onion
1 Stalk celery
Brown Meat well then pour stock or broth over it and add the veggies. Put on lid, lock it down, after steam starts to escape from "hole" put pressure weight on(is that what you call it??), turn heat down to medium low and let burble and hiss for 1 hour. Release steam carefully and gradually. Then remove the "spent" veggies(they were just for flavor, I give them to the dog) and add fresh veggies of your choice(carrots, onions, potatoes, celery, etc...) in the quantities you desire and cook in broth till tender. Then remove the meat and vegetables and thicken the gravy and enjoy.....

Pot Roast Under Pressure: Noreen's Kitchen
Greetings! Time got away from me this past Sunday when I wanted to make a pot roast. The answer? The pressure cooker of course! cooking the roast under pressure for about an hour and letting it stew for another 2 or 3 made a lovely pot roast that tasted just like I had cooked it all day.
I use a Wolfgang Puck Electric Pressure Cooker and I love it. I highly recommend that you look into purchasing an electric model for yourself. It saves time and helps you make slow cooked style meals fast. I really love mine and use it often, but oddly, not as often as I should.
You don't have to have a pressure cooker to make a pot roast. You can make this in your crock pot, slow cooker or just in a casserole in your oven. No matter what you choose, pot roast is always a welcomed dish for dinner and makes for a happy family!

Mom's Pot Roast With Gravy Under Pressure
No act of love, however small, is ever wasted
Easy cooking for busy families
The recipe is below:
3 lb. chuck roast
1 tblsp. olive oil
Salt and Pepper
1-1/2 cups beef stock
1 tblsp. tomato paste
3 cloves garlic
2 bay leaves
6 medium red bliss potatoes cut in half
3 medium carrots, peeled and cut into 2 inch lengths
2-4 tblsp. all purpose flour
3 tblsp. butter
Preheat your pressure cooker on saute. Add 1 tablespoon olive oil. Generously salt and pepper the roast and add to pc to brown on all sides.
After the roast is browned, remove from pot and set aside. Deglaze the pot with the beef stock. Then add the tomato paste, garlic and bay leaves. Return the roast to the pot. Put the pc on meat/stew setting. Lock it down and seal the release vent. Program on high pressure for 75 minutes. When the time is up quick release the pressure and add potatoes and carrots. Close and lock the top again and pressure an additional 10 minutes. Remove when done. Add flour and butter to the liquid left in the pot and make gravy. Enjoy this very tender, tasty roast and potatoes!
