Easy Vegetarian Chili Recipe and Demo
A great basic vegetarian/vegan chili recipe, easy to customize as a gluten free version. This recipe is a result of a few years of trial-and-error vegetarian home cooking- I hope you enjoy it as much as I do.
Recipe:
1 onion diced
4 Tbsp olive oil
2 chili spice packets (check for gluten free)
2 cans (or 1 large can) fire-roasted diced tomatoes
1 can red kidney beans (use liquid from each can of beans)
1 can black beans
1 can white beans (great northern, cannellini)
1 can garbanzo beans
1 can pinto beans
1 can hominy (drained and rinsed)
1 can pumpkin puree
Saute onion in olive oil, add spice packets. Combine tomatoes, all beans, pumpkin, and hominy, bring to a boil. Top and serve as desired-- more in video.

Creamy Pinto beans in [Crock pot] slow cooker
This is simply the best Pinto beans recipe you ever make. Trust me when I say this.
You don't need to add any salt. That alone is good for high blood pressure. There wad no pork used at all. I used only smoked turkey tails with a little bite of none salt seasoning.
All ingredients are listed below
1 1 tbsp Onion powder
2 1 tbsp Garlic powder
3 1/2 tsp Ground Cummin
4 1 tsp Paprika
5 1 tsp Cayenne pepper
6 Smoked meat of your choice (I used 2 Turkey tails)
7 1 cup dried beans
8 4 cup of broth (optional) your choice or water

Heat large heavy bottomed pot over med high with a long squeeze of olive oil followed by onion, poblano, and a pinch of salt. Stir and saute until softened and onions are becoming translucent (2-3min).
Add garlic, stir and cook until fragrant. Add tomato paste, chipotle peppers, and spices. Stir and cook for about 30sec.
Add 500g veggie stock and tomatoes and stir well to combine (including scraping the bottom to prevent burning). Add lentils, stir, and bring to a boil. Reduce heat to medium low, cover, and simmer for 15-20min, stirring occasionally, until lentils are cooked through.
Add beans and corn, stir. Add a bit more veggie stock if needed to thin the chili. Cover (lid cracked) and bring to a simmer for 10 min.
