Mexican RED CHILE SAUCE Recipe for Tamales, Enchiladas, Asado, Chili con Carne & More
This red chile sauce has been one of my most requested recipes and I'm sharing with you my version of our family recipe.

This red chile sauce is so versatile, so delicious, and so easy to make. This sauce is awesome because at its base, it can be used on so many different dishes, from enchiladas to tamales to menudo and so much more. All you got to do is start with this base, and then you can tweak it in any direction, probably as many different sauces as there are chilies, and that's not even taking into account that every single house is going to do it a little bit different.
So whether you're in Texas, New Mexico, Mexico, or along the frontera or anywhere in the USA, remember my advice, what Arnie takes always says, ain't no right way, ain't no wrong way to make chili sauce, and don't let nobody tell you you can't do it the way you like it.
Maybe what your grandma taught your mom, what my grandma taught my mom and my mom taught me may not be exactly the same, even if they're similar, but of course, my grandma's is better than yours. Just kidding! Don't get mad!
Let me just cover real quickly the couple of the different chiles I have. Now, the package here says cascabel or guajillo. It doesn't mean they're the same thing because they're not, but it means you might get one or the other in this package or possibly both. We also have some ancho chile, and we also have some pasilla chile. And I also have some chile de arbol down here. We use that one in our red chili sauce just to give it a little hint of heat and a little more complex flavor.
All right, so in the recipe we're going to use 15 guajillo/cascabel chiles, a couple of ancho chiles, and probably about four or five of the chile de arbol, a whole onion, and six cloves of garlic. All right, friend, let's get started and make this amazing red chili sauce.

THE BEST CARNE ADOVADA RECIPE: Delicious, Fork Tender, Braised Pork in New Mexico Red Chile
Whether you spell it ADOVADA or ADOBADA, this delicious, fork tender, braised pork in New Mexico red chile is one of my absolute favorite recipes. It's also one many of you have requested. And while there are many ways to make Carne Adovada, this is how I like it best. If you start with good chile, you don't need to add a whole lot of other ingredients to it. Read on for the recipe.
Carne Adovada
5 lbs. pork butt/shoulder, cut into 2 pieces
1-12 New Mexico red chile pods (choose hot, medium, or mild)
4-5 garlic cloves
1 Tbsp. Mexican oregano
1 Tbsp. cumin
salt to taste
2 bay leaves
*flour, optional
Cut pork meat into 2 pieces, season with salt, cover and place in refrigerator while you make the chile sauce.
Remove stems and seeds from chile pods. Rinse quickly to remove any dirt. place in bowl and pour very hot water over chile pods. (I like to boil water for this part.) Let sit approx. 15 minutes so that chile rehydrates and softens. Drain water from chile, but reserve chile water for later. Place chile in blender, along with garlic, oregano, cumin, and about 1 tsp. salt. Add between 2 and 2 1/2 cups of the chile water and blend until sauce is completely smooth. (You will not have to run your chile through a sieve if you blend long enough.) Set chile aside.
In a large dutch oven (or oven-safe pot with a lid), place enough oil to coat the bottom of the pan and heat on stovetop at medium high. If you choose, coat pork meat with a sprinkling of flour before frying them in pot. You don't need to cook fully, just enough to brown all the sides. Then pour in the chile sauce. Let it reach a boil. Place bay leaves on top, cover and lower heat. Let it continue to simmer 10-15 minutes. Meantime, preheat your oven to 325º.
Then place your pot in the oven, with the lid on, and let the carne adovada braise for 2-3 hours. The longer you leave it, the more tender the meat will be.

How To Make Spicy Chili Pork - Fast & Delicious Stir Fry!
This is one of the easiest and fastest ways to prepare a delicious stir fry spicy chili pork. This is a Chinese cuisine style recipe. If you don't like it spicy, feel free to use non-spicy chili.
Ingredients for 3:
200g pork belly
130g chili
1 green onion
1/2 teaspoon salt
2 cloves of garlic
6g ginger
35g vegetable oil
1 tablespoon oyster sauce
1 tablespoon light soy sauce
1/2 teaspoon dark soy sauce

Chinese-Style Glazed Pork Belly
Servings: 2-3
INGREDIENTS
500 grams pork belly, preferably lean
1 liter water
4 slices ginger
1 spring onion, cut into 2-inch pieces
2 cloves garlic, crushed
15 milliliters oil
25 grams brown sugar
45 milliliters light soy sauce
45 milliliters dark soy sauce
30 milliliters rice wine, shaoxing
250 milliliters water
Cooked rice, to serve
Sliced green onions, to serve
PREPARATION
Cut the pork belly into roughly 1-inch chunks.
Bring the water to a boil in a pot, then add the pork, ginger, onion, and garlic, cooking for about 3-4 minutes.
Remove the pork from the water and drain it on a plate lined with a paper towel. Discard the remaining water and vegetables. After cleaning and drying the pot, heat it with the oil over high heat.
Place the pork back in, cooking until browned. The oil may pop and splash so be careful.
Add the brown sugar, turning the heat to low. Stir continuously until the sugar has melted, caramelized, and coated the pork evenly.
Immediately add the soy sauces and rice wine, stirring and cooking for about 5-6 minutes or until the liquid has reduced into a thick glaze.
Add the water, stir, and cover the pot for about 45 minutes. Make sure the mixture is at a low simmer, not boiling. Check and stir every 10 minutes or so and add water if the pot is getting dry.
When the 45 minutes are up, remove the lid, checking to see if the sauce coats the pork in a very thick glaze. If it is too runny, continue to stir, uncovered, until the liquid has reduced.
Serve immediately over a bowl of rice and sprinkle with sliced green onions.
