How To make Pork In Spinach Sauce
1 1/2 lb Fresh spinach
Salt to taste 1 1/2 lb Boneless pork sirloin
3 tb Vegetable oil
2 Onion sliced thin
4 Cloves garlic crushed
1 Inch ginger root grated
3 tb Garam masala
1/2 ts Turmeric
1 Bay leaf
2 Tomatoes peeled and chopped
2 Green chiles seeded and
-chopped 2/3 c Nonfat yogurt
1 2/3 c Water
Trim spinach and cook in boiling salted water for 2-3 minutes until tender. Drain thoroughly and rinse under cold running water. Put in a blender or food processor and process to a smooth puree. Set aside. Preheat oven to 325 degrees. Cut pork into 1-inch cubes. Heat oil in a large skillet and fry pork until browned all over. Transfer to a casserole dish using a slotted spoon. Add onions to pan and cook, stirring, 10-15 minutes, until a rich brown. Add garlic, ginger, garam masala, turmeric, bay leaf, tomatos, and chilies. Cook, stirring, 2-3 minutes, until tomatos are softened. Add yogurt and water and stir well. Pour over posk, cover and bake 1 1/4 to 1 1/2 hours, until pork is tender. Remove bay leaf, stir in spinach and salt, recover and bake another 10 minutes. Serve hot, garnished with tomatos and bay leaves. Makes 4 servings. Notes: 2 10-oz packages of frozen spinach can be used for the fresh. Pan-Fried Pork Tenderloin with Baby Spinach

Heat the vegetable oil in a skillet.
Add the peppercorns and curry and mix. Cook them for a few seconds to flavor the oil.
Lay the pork tenderloin into the skillet.
After 4-5 minutes, when the bottom side starts to brown, turn over the meat.
Continue to fry the pork for 4-5 minutes on the other side, until it’s cooked through.
Melt the butter in another skillet, on low heat.
Crush the garlic and add it to the skillet. Fry the garlic for a few seconds, just to flavor the butter.
Add the baby spinach and season it with salt and pepper. Mix and cook the spinach until it wilts, for 1 or 2 minutes.
Add heavy cream and stir for about 1 more minute.
Serve the pan-fried pork tenderloin with the baby spinach.

Cheesy Spinach Stuffed Pork Chops
INGREDIENTS
Servings: 4
2 ounces cream cheese
½ cup mozzarella, shredded
2 tablespoons Parmesan, grated
Salt, to taste
Pepper, to taste
¾ cup frozen cooked spinach, thawed and squeezed out
6 1-inch thick pork chops
5 eggs
1 cups flour
3 cups panko breadcrumbs
Oil for frying
PREPARATION
1. Preheat the oven to 375℉ and heat 1-inch of oil to 375ºF in a deep pan.
2. Add the cream cheese, mozzarella, Parmesan, spinach, salt, and pepper to a bowl and thoroughly combine.
3. Season the top and bottom of the pork chop with salt and pepper, then slice a thin slit down the side of each chop.
4. Stuff each pork chop with an even amount of filling and press the edge to seal it.
5. Dip the chops in flour, then egg, then breadcrumbs, and back in the egg and breadcrumbs again.
6. Fry the chops until the breadcrumbs are golden brown, then transfer to a baking sheet and bake until the internal temperature reaches between 145ºF and 160ºF. Let rest for 3 minutes.
7. Enjoy!
