I believe Chicken Francaise, also known as Francese, was created in America by Italian immigrants. As with numerous Italian chicken dishes, they were originally intended for veal but taste equally as good with chicken. But back to the name, why an American Italian dish is called “French”, maybe it’s because of all the butter, maybe the wine, but one thing for sure, the flavours are superb! Enjoy it with a rich and dry white wine such as Sauvignon Blanc or Chardonnay, or even a light red such as Gamay or Pinot Noir. Pork Diane recipe: serves 7
Ingredients:
7 pork chops
Rice flour 1/4 c
Lime Juice 2 T
Worcestershire sauce 2 T
Dijon mustard 2 T
Milk 2.5 c
Heavy whipping cream 3 oz
Onions 2
Butter 2 sticks room temp
1. Julianne onions, and brown in 4 T butter. Caramelize over medium heat, for about 15 minutes. Salt to taste. Remove to heatproof bowl.
2. Put skillet back on medium heat, and add pork chops. Brown on both sides, and if internal temp isn't 160, then put it in a pan in the oven at 350 until the pork is done.
3. Skillet back on heat, if the pork leavings in the pan are browned, add the rest of the butter. If not, add slightly less butter, and then sprinkle in the flour, wisking well between additions. You are building a roux, and that's a bit time consuming.
Cook the roux for 3 ish minutes, to make a blonde roux.
4. Add milk slowly, then add heavy cream, Dijon, Worcestershire sauce, and lime juice. Whisk! This sauce burns easily. Don't be afraid to lower the heat, and go slowly. You want the sauce to thicken quite a bit. Add the onions back to the sauce, just to warm up, then add the pork, when it's done (or mostly done).
5. Plate nicely, salt and pepper to taste, and enjoy!
