How To make Poppy Seed Pasta
2 c All-purpose flour*
1 tb Poppy seeds
1 tb Chopped fresh or
1 ts Dried herb, crushed,
-If desired 1/2 ts Salt
2 Eggs
1/4 c Water
1 tb Olive or vegetable oil
4 1/2 Quarts water
1/4 ts Salt, if desired
*if using self-rising flour omit The 1/2 teaspoon salt Mix flour, poppy seeds, herb and 1/2 teaspoon salt. Make a well in center of flour mixture. Mix in eggs, 1/4 cup water and the oil thoroughly. (If dough is too dry, mix in a few drops of water. If dough is too sticky, mix in small amount of flour.) Gather dough into ball. Knead on floured surface about 5 minutes or until smooth and elastic.Divide dough into 4 equal parts. Roll one part at a time into paper-thin rectangle on generously floured surface (keep remaining dough covered). Loosely fold rectangle lengthwise into thirds. (If using pasta machine, pass dough through machine until 1/16-inch thick.)Heat 4-1/2 quarts water to boiling. Stir in 1/4 teaspoon salt and the pasta. Cook 3 to 5 minutes or until almost tender; drain. 8 SERVINGS (ABOUT 3/4 CUP EACH); 140 CALORIES PER SERVING.

It’s not surprising that this CREAMY POPPY SEED DRESSING is a repeat contender for salad dressing of the year. Not only is it perfect on our LAYERED SPINACH SALAD, but we’ve been enjoying it on other salad creations with great success. It’s an easy recipe and very delicious!
Nothing complicated in making it, but here are a few tips:
FRIDGE MAGNET
Whenever I make this salad dressing, I think of it as fridge-friendly since so many of the ingredients are already there. The creaminess comes from sour cream and mayonnaise, and milk is used right at the end to thin it out to your taste. The other ingredients are all standard pantry fare.
POPPY SEEDS
Going heavy with the poppy seeds in this recipe are as much about flavour as it is about appearance. Keeping poppy seeds on hand is a smart move; you’ll be crafting this dressing recipe again and again.
GO FORWARD
Once you’ve made the CREAMY POPPY SEED DRESSING, store it in an airtight container, canning jar or dressing bottle. Give it a solid shake before use and you’ll be good to go.
Although we often think of pairing a POPPY SEED DRESSING with spinach salad, don’t stop there. I recently dressed a package of prepared coleslaw with it - fabulous. It also found its way onto our SIMPLE SALAD and can even be enjoyed drizzled over sliced tomatoes or avocados.

CREAMY POPPY SEED DRESSING will do your next salad proud!
INGREDIENTS
¼ cup sour cream
¼ cup mayonnaise
1 clove garlic, finely minced
2 tablespoons honey
juice of half a lemon
1 tablespoon poppy seeds
kosher salt to taste
2% milk, enough to thin out the dressing
INSTRUCTIONS
1) Place the sour cream, mayonnaise, garlic, honey, lemon juice and poppy seeds into a small bowl and whisk together until smooth. Adjust flavour with salt. Thin out the dressing to your taste by adding milk 1 tablespoon at a time.
2) Transfer dressing into a storage container and use within two weeks.

Pasta Grannies enjoy poppyseed fritters from Süd Tyrol called krapfen
Rosa and Maria share their recipe for delicious deep fried poppyseed (or jam) filled pastries called krapfen in the region of Süd Tyrol. They're delicious - do try them. Make a dough with the following:
500g 00 or all purpose/plain flour
250g rye flour
a sachet of vanilla sugar (or 1/2 teaspoon pure vanilla essence)
1 teaspoon salt
3 egg yolks, 1 egg
2 tablespoons neutral oil
1 tablespoon grappa
90ml single cream, 450ml whole milk
Let it to rest for 2 hours, covered.
For the filling, Rosa and Maria used 300g of a ready-mix of poppyseeds ground with sugar (thank you to everyone who translated the bag) to which Maria added some ground cinnamon, cloves and a little more sugar. Add enough warm water to form a paste, leave it for an hour and add more if necessary. Or find a pot of your favourite jam. As Maria says, the sweet filling varies from household to household.
And take the krapfen fritters on your sledging adventures like Rosa if you can!
