2 pounds hamburger 1 package saltine crackers 1 teaspoon salt 1 small onion -- chopped 1 cup milk 1/4 teaspoon pepper For Mushroom Sauce : 2 tablespoons butter 2 tablespoons flour 2 cups milk 10 large mushroom 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 cup water Mix hamburger, crackers, milk, onion,salt, and pepper. Press onto cookie sheet (about 1-1/2" thick) and refrigerate overnight or at least 8 hours (form into nice rectangle before refrigerating). Cut into serving size squares, roll in flour and brown in hot oil or butter (both sides). Put into baking dish and cover with mushroom sauce (recipe below). Add 1/2 cup water around sides of baking dish. Bake at 350 degrees for 1-1/2 to 2 hours. Cover dish while baking. To make mushroom sauce. Simmer Mushrooms in 2 tablespoons butter and 2 tablespoons water until tender and slightly browned. Set aside. Add butter to small skillet on low heat. Add flour. Stir until butter melts completely and mixture bubbles nicely. Add milk all at once. Bring to boil stirring constantly. Add mushroom mixture (do not discard liquid mushrooms were browned in). Simmer slowly until thickened.

steps for tenderizing: -- coat entire top of steak with coarse salt.

-- completely wash off salt. Pat dry the meat with a paper towel

Ingredients
2 pounds ground beef 1 ½ cups saltine crackers crushed 1 cup whole milk ½ teaspoon Italian seasoning ½ teaspoon garlic powder ½ teaspoon onion powder ½ teaspoon paprika ¼ teaspoon cayenne Salt and pepper to taste for the patties 1 cup flour for dredging or more if needed Salt and pepper to taste for the flour dredge 2 tablespoon butter 1 tablespoon olive oil Gravy Ingredients: 2 cans 10.75 oz condensed cream of mushroom soup 1 ½ cups whole milk 1 ½ tablespoons fresh parsley chopped Instructions Preheat oven to 350 degrees and spray a 9x13-inch baking dish with nonstick spray. In a medium bowl, whisk together the cream of mushroom soups and milk and then stir in the chopped parsley. Set aside. In a large bowl, combine the ground beef, crushed saltines, milk, Italian seasoning, garlic, onion powder, paprika, and cayenne pepper. Season with salt and pepper to taste. Using a spoon or your hands, combine the ingredients until mixed. Gently form into even-sized patties (or spread into the bottom tray of a Burger Master/Freezer Buddy). Place 1 cup of flour in a shallow dish. Season the flour with salt and pepper. Dredge all the patties in the flour. Heat a large skillet over medium-high heat and melt the butter and add the olive oil. Once hot, sear patties on both sides until golden brown. Work in batches. It will continue cooking in the oven. Transfer the browned patties to the greased baking dish. Pour the gravy evenly over the top of the patties. Cover the dish with aluminum foil. Place baking dish in the oven and bake for 30-40 minutes or until cooked through.

We first tried poor man’s hamburger steaks when we were driving around Philadelphia with family and stopped in at Reading Terminal Market when there was an Amish vendor there. There was something about the gravy-covered hamburger steaks that was so simple, yet so comforting and fulfilling that we knew it had immediately become a recipe we would try to recreate on our own and would end up coming back to again and again.
