CRUST:
1 x Shortbread; See Recipe # 23
CHEESECAKE:
4 c Dry Curd Cheese; 2 lbs, * 1/2 ts Salt
1 1/2 c Sugar; Granulated 4 ea Eggs; Large, Lightly
Beaten 1/2 c Butter; Melted 1 ts Vanilla Extract
CRUMB TOPPING:
1 c Unbleached Flour 1/2 c Confectioners' Sugar
1/2 ts Cinnamon; Ground 1/4 c Brown Sugar; Packed
1/4 c Butter; Melted 1 tb Unbleached Flour
* Use either Dry Curd Cottage or Farmer cheese in this recipe. ~ Preheat the oven to 350 degrees F. Place the cottage cheese in a sieve and drain. In a small bowl, mix the flour, salt, and sugar. Set aside. In a large bowl, combine the cottage cheese with the eggs, butter, and vanilla. Mix until well blended and smooth. Add the dry mixture and blend well. Pour the mixture into the prepared crust and set the cake aside. Prepare the topping by sifting the flour, sugar, and cinnamon together. Add the brown sugar and blend well. Pour the melted butter over the topping mix and immediately stir with a fork to form small crumbs. Sprinkle the topping mix over the surface of the cake and bake the cake for 50 minutes, or until done. Cool to room temperature and then chill. :

Polish Cheese Cake | Quick Recipe
Important: after taking the cake out of the oven, let it cool down. Then put it in the fridge overnight.
Ingredients:
1 kg of white cheese (suitable for cakes)
4 medium eggs
a cube of butter - 200 g
3/4 cup of sugar - about 150 g
4 tablespoons of potato starch - up to 100 g
some vanilla flavor
Baking:
Place the form with the dough in an oven preheated to 190 degrees. Middle shelf with up / down heating. After 20 minutes, reduce the temperature to 150 degrees and bake the cheesecake for another 30 minutes. After this time, set to 120 degrees and bake the cheesecake for the last 30 minutes. 4 egg yolks (save the egg whites for the cheese filling)
210 grams granulated sugar
3 tablespoons sour cream
3 teaspoons baking powder
3 tablespoons baking cocoa
250 grams unsalted butter or margarine (softened)
Cheese filling:
1 kilogram white farmers cheeses
5 eggs (Separate the yolks and whites)
250 grams unsalted butter or margarine (can substitute with a 100 milliliters oil)
250 grams granulated sugar
2 packages cream or vanilla puddings without sugar (40 grams each package)
1 tablespoon vanilla sugar or vanilla extract

Blueberry Cheesecake: Polish Style | How to make Polish sernik
Learn how to make a Polish cheesecake, known as sernik, with a blueberry twist - good for those who don't like raisins used in the traditional recipe ;)

The recipe
For the base:
300g cake flour
100g sugar
2 tsp baking powder
8g vanilla sugar
100g cold butter
2 eggs
For the filling:
400g twaróg (quark cheese)
1 lemon peel
100g sugar
8g vanilla sugar
1 packet of vanilla pudding
250ml heavy cream
For the topping:
400g blueberries
Bake: 180c, 40 minutes

1. Sift the flour and baking powder into a bowl, add the sugar, vanilla sugar, and cold butter cut in cubes. Add eggs and mix everything together with your hands. Once together, keep in fridge for 30-60 minutes.
2. Grind cheese until smooth, add lemon peel, sugar, vanilla sugar and pudding mix. Mix well. In a separate bowl, beat the heavy cream until stiff.
3. Preheat oven. Roll out chilled dough between two sheets of baking paper cut to the size of your baking pan, making sure to roll out enough to cover the sides. Place rolled out dough in baking pan, seal any holes with your fingers.
4. Delicately fold the whipped cream into the cheese mixtures. Add the newly formed mixture to the pan, coating evenly. Sprinkle blueberries evenly on top, transfer to oven and bake. After about 40 minutes, the crust will be golden and the cheesecake will still be a wobbly in the middle, it will cool and condense.
