Pistachio Cake Recipe
This pistachio cake is probably one of the best cakes I've ever made. Soft and rich pistachio sponge cake, covered with super delicious pistachio buttercream frosting and chopped pistachios. The perfect dessert for pistachio lovers.

Ingredients:
For the cake:
1 cup (150g) Pistachios, finely chopped/crushed
1/2 cup (115g) Butter, softened
2¼ cups + 2 tablespoons (300g) Flour
1½ teaspoons Baking powder
1/2 teaspoon Baking soda
1/4 teaspoon Salt
1 cup (200g) Sugar
3 Eggs, large
1 teaspoon Vanilla extract
1 cup (240ml) Buttermilk
For the frosting:
100g (7tablespoons) Butter, softened
3/4 cup (170g) Creem cheese
1/4 cup (60g) Pistachio paste
1 cup (125g) Icing sugar
For topping:
Crushed pistachios
Directions:
1. Make the cake: preheat oven to 350F (180C). Line a 9-inch square baking pan with parchment paper and set aside.
2. In a bowl mix flour, baking powder, baking soda and salt.
3. In a large mixing bowl, cream butter and sugar and light and creamy. Add eggs, vanilla extract and whisk until combined.
4. Sift in half of the flour mixture and mix and combined. Then, pour half of the buttermilk. Repeat one more time.
5. Add chopped pistachios and fold until combined.
6. Pour the batter into prepared pan and bake for 35-40 minutes or until….
7. Allow to cool for 5 minutes in the pan, release from the pan and allow to cool completely on a wire rack.
8. Make the frosting: in a bowl beat softened butter, add icing sugar, cream cheese, pistachio paste and beat until smooth.
9. Decorate: when cake is chilled, spread the frosting over the cake. Sprinkle some chopped pistachios.
10. Refrigerate for at least 3 hours before serving.

1 Yellow Box Cake Mix
1 Pistachio Instant Pudding (3.4 oz box)
4 Eggs at Room Temperature
1 C. Milk (2% or Whole Milk)
1/2 C. Vegetable Oil
1/2 t. Almond Extract
1/8 t. Green Food Coloring (optional)
Powder Sugar to garnish
Bake @350 degrees 45-55 minutes, or until toothpick comes out clean.
Once cake is cooled completely, garnish with the powder sugar.
Cake is 2x as good the next day after the flavors have settled.

Roast at 300F for 5min
* I prefer roast pistachio on low temperature with a short period of time because I didn't want to lose a nice green color of pistachio

*제 경험상 피스타치오를 높은 온도에서 굽게 되면, 피스타치오의 이쁜 초록색을 잃게되더라구요. 개인적으로 맛도 별로구요. 특히나 이 케익은 피스타치오로 장식할 거라서 최대한 초록빛이 날 수 있도록 낮은 온도에서 짧은 시간동안 로스팅 해주었습니다.

1 box cake, white or yellow
1 box (3.4 oz) pistachio instant pudding & pie filling mix
1 cup whole milk
1 cup canola/vegetable oil
3 eggs
Green food coloring
Bake at 350 F or 177 C for 30 minutes. Cover with aluminum foil and bake an additional 10 minutes.

1 box (3.4 oz) pistachio instant pudding & pie filling mix
½ cup whole milk
1 tub (8 oz) COOL WHIP original whipped topping, thawed
Green food coloring
Garnish with chopped pistachios. Enjoy!
