pistachio white chocolate shortbread cookies (vegan & gluten-free) Something Vegan
RECIPE
2/3 cup vegan margarine
1/4 cup organic sugar
1 tsp. vanilla extract
1 cup white rice flour
1/2 tsp. salt
1/4 cup shelled pistachios, chopped
1/4 cup vegan white chocolate chips (I bought some from veganessentials.com)
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add margarine, sugar, and vanilla. Cream together until smooth. Add rice flour, and salt. Stir well. Add pistachios, and vegan white chocolate chips. Stir in. Shape into small flattened disks and place on a baking pan. Bake for 18-20 minutes. Makes one dozen cookies.

If I find where I originally got this recipe from, I’ll post but I had written down in my holiday recipe binder!
Preheat to 375
In mixer - add 8tbsp softened butter, 1/2 cup granulated sugar, 1/2 cup light brown sugar and mix for about 5 minutes…then add 1 egg and 1tsp vanilla extract
In another bowl mix 1 & 1/2 cup ap flour & 1/2tsp baking soda then add to wet mix just until it looks like cookie dough and flour is incorporated
Stir in 1 cup white chocolate chips, 1/2cup chopped pistachios, & 1 cup of dried cranberries
Spoon out on cookie sheet
Bake 9 minutes *
***This cookie recipe turned out amazing! As I put in the video, one of the batches cooked too long, and one was undercooked at first so I like to start at 9 minutes and depending on your size of cookie, check it out and throw back in if needed.

Ingredients :
150g (2/3 cup) butter(牛油)
100g (1/2 cup) brown sugar (黄糖)
1 egg(鸡蛋)- grade A
1/2 tsp vanilla extract (香草精)
220g (1 2/3 cups) plain flour (普通面粉)
1 tsp baking powder (发粉)
1/2 tsp baking soda (苏打粉)
1/2 tsp salt (盐)
80g (3/4 cup) chopped pistachios (开心果碎)
100g (1/2 cup) white chocolate chips (白巧克力粒)
Bake in a preheated oven at 170°C for 15-18minuets.

Lynn demonstrates how to make White Chocolate Cranberry Pistachio Cookies that would be perfect for the Holidays. These are full of good ingredients. Makes about 2-1/2 dozen cookies.
I filmed this video on my iPhone. My husband usually films all of my videos, but I wanted to share this recipe with you. I took them to a Holiday neighborhood cookies exchange the day I made them and he was working and couldn’t film.
½ cup butter, softened
½ cup packed brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
1-1/2 cup all purpose flour
½ teaspoon baking soda
1 cup white chocolate chips
½ cup pistachio nuts, shelled
1 cup dried cranberries
Note: add ¼ teaspoon salt, if your nuts are not salted
Preheat oven to 375°. Grease a cookie sheet or line with parchment paper and set aside.
In a large mixing bowl, combine the butter and sugars. Using an electric mixer, cream the butter and sugars until fluffy for about 3-5 minutes.
Beat in the egg and vanilla extract.
In a separate bowl, combine the flour and baking soda. Using a wooden spoon, carefully stir the flour mixture into the butter mixture, just until combined. Stir in the white chocolate chips, dried cranberries and pistachio nuts.
Drop heaping spoonfuls onto the cookie sheet.
Bake the cookies for 8-10 minutes (it took mine about 11 minutes) or until they just begin to turn golden around the edges. Allow to cool for 2 minutes on the cookie sheet before transferring them to a wire rack to cool completely.

On this Sweet Saturday, I’m sharing a dessert for all of you who have a sweet-tooth. Pistachio White Chocolate Chip Cookies are not very popular to everyone else, but it is to me. It’s one my my favorite cookies! Today I’m sharing this special recipe with you and I hope you enjoy it!

For the recipe, you will need:
¾ cup of butter (room temperature)
1/4 cup brown sugar
¾ cup white sugar
1 tablespoon of vanilla extract/essence
1 teaspoon of almond or pistachio extract/essence
1 egg (room temperature)
1 -3.4 oz box of instant pistachio pudding mix
1 ¾ cup of flour
1/4 teaspoon of salt
2 teaspoons of baking powder
½ cup of chopped pistachios (roasted or plain)
1 cup of white chocolate chips
Green gel food coloring (optional)
Bake for 12-15 minutes at 325 F or 163 C
This recipe yields 15-18 cookies. It will yield more if you make them smaller.
