How To make Piquant Meatloaf with Mushroom Gravy
1 1/2 lb Ground beef
1 ts Salt
1/8 ts Pepper
1/4 ts Paprika
1/4 ts Oregano
1/4 ts Thyme
1/8 ts Garlic powder
1/8 ts Chili powder
1 ts Parsley flakes
3/4 c Evaporated milk
1 Egg
1/2 c Cracker crumbs
1/4 c Onions - chopped
SAUCE:
1/4 lb Mushrooms - sliced
3 tb Unsalted butter
2 1/2 tb Flour
1 ts Onions - chopped
1/2 ts Paprika
1/2 ts Salt
3/4 c Cream
3/4 c Beef broth
Contributed to the echo by: Fred Towner Originally from: Calgary Suns Great Meatloaf Recipe Search - Monday June 4, 1990 Submitted by Lidia Barwis Piquant Meatloaf with Mushroom Gravy LOAF: Sprinkle meat with salt, pepper, paprika, oregano, thyme, garlic powder, chili powder and parsley flakes. Toss with fork to mix. Combine evaporated milk and egg in bowl, stir in cracker crumbs and let soak for 5 minutes. Add to ground beef mixture with onions and mix well. Bake in 350F oven for 1-1/4 hours. GRAVY: Saute mushrooms and onions in butter until limp. Combine flour, salt and paprika. Blend with mushrooms. Stir in broth and cream. Cook until thick and bubbly. Serve over sliced meatloaf. Servings: 6

Like many comfort foods, there are a 1000 different meatloaf recipes, and you can find one to fit any taste. In this video, I show you how to make my Italian Meatloaf, which is one of my favorites. I combine pork and beef for the meat, and use some herbs, red bell pepper, and Parmesan cheese to add the Italian twist.
Once cooked to perfection, I serve my meatloaf with a basic tomato sauce, that give the meat a nice tang. Along with some mashed potatoes and simply cooked vegetables, I'm in heaven.
