How To make Pinto Beans and Squash Stew
1 lb Dried pinto beans
Salt 1 sl Salt pork (1/4x2")
1/4 Onion, chopped
2 Garlic cloves, minced
Pepper 4 sl Bacon, cubed
1 Jalapeno chili, seeded and
-minced 2 Green onions, minced
1 Butternut squash, peeled and
-cubed 1 c Beef stock
1/2 Red onion, finely diced
1/4 c Chopped cilantro
3/4 c Sour cream
Cover pinto beans and 1 teaspoon salt with 3" of boiling water in large pot. Add salt pork, onion and garlic. Cover and bake at 250'F. until beans are cooked, 2 to 2 1/2 hours. Season to taste with salt, if necessary, and pepper. Keep warm. Cook bacon with jalapeno and green onions over low heat in large saute pan until bacon is crisp. Add squash and stock. Cover and cook until squash is just tender, about 1/2 hour. Combine beans and squash and mix gently but well. Do not smash beans or squash. Spoon beans and squash into 6 serving bowls. Sprinkle each with red onion, cilantro and 2 tablespoons sour cream. Each serving contains about: 456 calories; 325 milligrams sodium; 25 milligrams cholesterol; 18 grams fat; 57 grams carbohydrates; 20 grams protein; 5.45 grams fiber.

1 tablespoon olive oil
1 large onion chopped
2 garlic cloves minced
1 large carrot chopped
1 celery rib chopped
6 cups vegetable broth
1 teaspoon dried thyme
½ teaspoon oregano
1 teaspoon kosher salt
½ teaspoon black pepper
3 15-ounces canned white beans drained and rinsed
2 cups baby spinach
Fresh parsley for serving
Grated parmesan cheese for serving
INSTRUCTIONS
1. In a large pot or saucepan, heat olive over medium high heat. Add onions and garlic; cook until onions are translucent, and garlic is fragrant, about 2-3 minutes, while stirring regularly. Add in the carrots, celery, thyme, oregano, salt and pepper, and cook for an additional 2-3 minutes.
2. Add vegetable broth and beans, bring to a boil, reduce heat and simmer for 15 minutes to combine all of the flavors together.
3. Stir in the spinach and continue to simmer until the spinach wilts, about 2 minutes
4. Remove from heat, sprinkle fresh parsley and grated parmesan cheese, if desired, and serve immediately.

Čorbica od crnog pasulja i tikve

Sastojci
2 kašike maslinovog ulja
1 crni luk srednje veličine, isjeckan
4-5 čena belog luka, sitno sjeckanog
1/2 kašičice mljevenog korijandera
2 kašičice dimljene paprike
2 konzerve crnog pasulja, isprane i ocjeđene - 585 g ocjeđene mase
1 mala ( 540 g) muskatna tikva oljuštena i isjeckana na kockice
3 sušena lista lovora
1 kašičica soli
3-4 šolje vode ili povrtnog bujona/posnu kocku za supu
2-3 šake spanaća
1/2 limete, sok
Peršun za posipanje
Postupak:
1. U velikom loncu na umjerenoj vatri izdinstajte luk na ulju dok ne omekša, oko 5 minuta. Dodajte bijeli luk, papriku i korijander i kuvajte još minut.
2. Dodajte pasulj, tikvu, vodu (ili bujon), lovorov list i so, pa pojačajte vatru. Pustite da proključa, poklopite i ostavite da se krčka na srednjoj temperaturi. Kuvajte oko 10-15 minuta dok tikva ne omekša.
3. Dodajte spanać i kuvajte još minut.
4. Sklonite sa vatre, dodajte sok od limete,peršun, so i biber po ukusu.
Poslužite preko integralnog pirinča ili kinoe.

Recipe:
1. Pinto beans: 500g / 17.6 oz. cooked in the pressure cooker, and I seasoned only half and put the other half in freezer for future use
2. Potato: 1 medium size, cut into cubes
3. Tomato: 1 & 1/2 medium size, chopped
4. Cilantro/coriander: As per your taste
5. Red onion: 1 medium size, julienned
6. Organic vegan mushroom stock cube (Kallo brand): 1/2
7. Himalayan crystal black salt: As per your taste
8. Water in the pressure cooker: 5 cups
9. Water in the pan to cook the potato & tomato: As required
10. Extra virgin coconut oil: 1.5 tbsp.
