How To make Pineapple Sour Cream Pie
1 1/2 cups Graham cracker crumbs
1/3 cup Margarine
melted
3 tablespoons Sugar
:
FILLING 1/2 cup Sugar
1/4 cup Flour
1/2 teaspoon Salt
2 1/2 cups Pineapple;crushed :
undrained
1 cup Sour cream
1 tablespoon Lemon juice
2 Egg yolks slightly beaten
:
MERINGUE----- 2 Egg whites
1/4 teaspoon Cream of tartar
1/4 cup Sugar
1. For crust, combine crumbs, margarine and sugar in bowl; blend well with fork. Spoon crumb mixture into 9" pie pan. Set an 8" pie pan on top and press to make even crumb layer. Remove 8" pie pan. Bake crust at 375 degrees for 8 minutes if desired, or use as is. 2. Combine sugar, flour and salt in medium saucepan. Stir in pineapple, sour cream and lemon juice; cook over medium heat, stirring, until mixture comes to boil. Cook 2 minutes. Stir 1/2 c of cooked mixture into beaten yolks; return filling/egg yolk mixture to remaining filling. Cook for 2 minutes more, stirring constantly. Cool slightly. Spoon filling into crust. 3. Make meringue by beating egg whites with cream of tartar until soft peaks form. Add sugar gradually, beating until stiff peaks form. Spread over pie filling; seal edges. 4. Bake at 350 degrees for 12-15 minutes or until golden brown.

I've got another yummy dessert for y'all to try! This thing is good to eat any time of year, but I think it would also make a fabulous summer time dessert with all this pineapple! Make sure you try this one!!

Pineapple Dream Dessert:
1 can crushed pineapple
1 container cool whip, 8 oz
1 block cream cheese, softened
1 stick butter, melted
2 sleeves graham crackers, crushed into crumbs
2 cups powdered sugar, sifted
Start by crushing up those graham crackers. You can use a ziploc bag or a food processor to crush them up, or get some pre made crust if you want. Add the melted butter and mix really good. Set aside about 1/2 cup of the crumb mixture. Press the crust into a 9x13 pan (or 2 smaller pans like I did). Put it in the fridge until you're ready for it. In a bowl, add your softened cream cheese and go ahead and blend it with your stand or hand mixture till it's kinda smooth. Then add your sifted powdered sugar in a little at a time until it's well combined. Sit it to the side. In another bowl, add your cool whip. Drain the crushed pineapple. Add half to each bowl and mix well. Take your crust out of the fridge and layer the cream cheese mixture and then the cool whip mixture. Be careful when spreading each layer. Sprinkle the reserved crumbs over the top. Put in the fridge for at least 4 hours. I put mine in there overnight.

Pineapple Pie
Ingredients:
• 1 20 ounce can crushed pineapple (don't drain)
• 1 cup sour cream
• 2 - 3.4 ounce packages vanilla instant pudding mix
• 1 store bought graham cracker pie crust
• Cool whip
Directions:
1. In a large bowl mix crushed pineapple, sour cream and vanilla pudding mix.
2. Pour into pie crust and spread evenly.
3. Chill.
4. Before serving top pie with cool whip.

No bake pineapple cream pie is super easy and takes about 5 minutes to put together! It's perfect for potlucks and summertime cookouts plus it freezes like a charm for up to 3 months.

8 ounces cream cheese, softened
½ cup sugar
1 teaspoon vanilla
20 ounces crushed pineapple, drained
8 ounces Cool Whip (plus more for topping if desired), thawed

Instructions:
1. Add the cream cheese and sugar to the bowl of an electric mixer.
2. Beat until well combined and the sugar crystals have mostly gone.
3. Scrape down the sides of the bowl.
4. Add the vanilla and beat until well mixed.
5. Stir in the pineapple.
6. Fold in Cool Whip gently until well blended.
7. Spoon the pineapple mixture into a graham cracker pie crust.
8. Refrigerate for 3 - 4 hours or overnight.
