Here is a pie recipe that has become a favorite at family gatherings. This recipe is called the Coconut Pineapple Chess Pie. It is super easy to put together and will be a delight for those pineapple and coconut lovers! I hope that you will try it and enjoy!
Here is the recipe:
1 1/2 cup sugar
1 tablespoon all purpose flour
3 tablespoons corn meal
1/4 teaspoon salt
1/2 stick (1/4 cup) of butter or margarine
4 large eggs
1 teaspoon vanilla extract
1 (15 oz.) can crushed pineapple, drained very well
1 cup flaked coconut
Directions:
- HEAT oven to 350°F.
- COMBINE sugar, flour, corn meal and salt in bowl of electric mixer; mix until combined. Lightly beat eggs and then add them to sugar mixture in bowl, along with the vanilla. Beat at medium speed, until well combined. Next. add melted butter or margarine, pineapple and coconut flakes. Mix well. Pour into unbaked pie crust.
- BAKE One hour or until lightly browned and knife inserted in center comes out clean. Cool to room temperature before serving. - Refrigerate leftover pie.

Filipino style coconut pie mainly filled with creamy fresh & tender young coconut meat.
✔️Dough
1 cup [240 ml] + 1/2 cup [120ml]water
1/4 cup sugar
1/4 tsp salt
1/3 cup veg.oil [80 ml]
4 cups all purpose flour [512 grams]
✔️Filling
2 & 1/2 fresh coconut juice (or water ) [600 ml]
1/2 cup milk powder [60 grams]
1 cup cornstarch flour [125 grams]
1/2 cup sugar [100 grams]
1/4 tsp salt
350 grams young coconut meat [2 pcs. coconut fruit]
⁉️READ ME‼️
✴️Since the recipe calls for veg. oil & is at 50% hydration, the dough will not be crumbly thus its crust is not the flaky type. The dough recipe intends for basic & alternative ingredients only. For flaky crust, use cold butter & reduce water to achieve crumbly dough & flaky crust.

Baking time: 30-40 mins @ 170C.
✴️Please check your actual pie texture when baking coz time & temp will vary on the type of oven.
✴️If softer crust preferred, bake for not more than 30 mins. 35-40 mins or more baking time for medium toasted crust.

파인애플 모양을 똑 닮은 파인애플 코코넛 파이를 만들었어요~
파인애플을 큼직하게 졸여 넣었더니 씹는 식감도 좋고 비주얼도 더 먹음직 스러워 보이는 것 같아요~
아몬드 크림에 코코넛 가루를 넣어 풍미도 좋고 고소하고 파인애플과 맛도 잘 어울리더라구요~^^
파이 시트로 무늬를 내고 남은 반죽을 뭉쳐 초록색으로 색을 입혀 나뭇잎 모양으로 구워 장식해 봤는데 더 파인애플 느낌이 나는 것 같아요~
심플한 파이 지만 모양만 살짝 다르게 했더니 색다른 느낌이 나서 예쁘네요~~

▶재료
박력분 120g
차가운 무염버터 80g
차가운 물 27g
설탕 3g
소금 1g
파인애플 240g
설탕 25g
레몬즙 5g
무염버터 60g
슈가파우더 35g
달걀 1개
바닐라익스트랙 3g
아몬드가루 40g
코코넛가루 30g
박력분 10g
▶레시피
1. 박력분에 차가운 무염버터를 넣고 버터가 밀가루와 섞여 작은 크기가 될 때까지 스크래퍼로 섞고 차가운 물에 설탕, 소금을 넣고 섞은 뒤 반죽에 넣고 섞는다.
2. 반죽이 한덩이로 뭉치면 랩으로 감싸 냉장실에서 1시간 정도 휴지 시킨다.
3. 파인애플을 작게 자르고 냄비에 설탕과 함께 넣고 저으며 끓이다가 파인애플이 투명해지면 레몬즙을 넣고 마무리한 뒤 다른 볼에 옮겨 담아 식힌다.
4. 무염버터를 부드럽게 풀고 슈가파우더를 넣고 섞은 뒤 달걀과 바닐라익스트랙을 넣고 섞고 아몬드가루, 코코넛가루, 박력분을 넣고 섞는다.
5. 휴지 시킨 반죽을 틀 크기에 맞게 밀어 틀에 넣고 모양을 잡은 뒤 포크를 이용해 바닥에 구멍을 낸다.
6. 코코넛 아몬드 크림을 채우고 식힌 파인애플을 평평하게 올린다.
7. 남은 파이 반죽을 뭉쳐 넓게 펴고 길게 자른 뒤 파인애플 위에 교차로 올려 모양을 잡고 달걀노른자와 우유 섞은 것을 바른다.
8. 180도 (190도 20분 예열) 40분 정도 굽고 식힌다.

8 oz whipped topping (cool whip) or use 8oz whipped cream

COCONUT PINEAPPLE CUSTARD PIE RECIPE - PINA COLADA
Coconut Pineapple Custard Pie is one of my new favorites! Toasty coconut on top and sweet tender pineapple on the bottom... Give this pie a try, you will not be disappointed!
Ingredients:
2 eggs
4 egg yolks
1 cup granulated sugar
1/4 cup brown sugar
1/4 cup flour
1/4 cup corn starch
1/4 tsp salt
1 cup whole milk
1 stick melted butter (unsalted)
1 tsp vanilla
1 cup shredded coconut
1 15 oz can of pineapple chunks
Instructions: To a large bowl add eggs and yolks...beat well. Add sugar and mix well. Next add the flour, cornstarch and salt...mix. Now add the milk and vanilla...mix again. Finally, mix in the butter. Now drain your can of pineapple chunks and place them in the bottom of the pie dish/pie crust. Pour the wet mix in over the pineapple. Sprinkle the coconut on top with a little bit of brown sugar. Bake at 350F for 50-60 minutes or until golden brown on top. I like to cover my crust with aluminum foil for the first 30 minutes of baking. Once done baking, let the pie cool for a minimum of 2 hours. Now dig in and enjoy!
