1 1/2 c Sugar 3 tb Cornmeal 2 tb All-purpose flour 1/4 ts Salt 4 Large eggs; lightly beaten 1 ts Vanilla extract 1/4 c Butter or margarine; melted 3 1/2 oz Flaked coconut 15 1/2 oz Can crushed pineapple; very -well drained 1 Unbaked 9-inch pastry shell Combine first 4 ingredients in a large bowl; add eggs and vanilla, stirring until blended. Stir in butter, coconut, and pineapple; pour into unbaked pastry shell. Bake at 350 degrees for 1 hour or until set; covering with aluminum foil after 40 minutes. Here is a pie recipe that has become a favorite at family gatherings. This recipe is called the Coconut Pineapple Chess Pie. It is super easy to put together and will be a delight for those pineapple and coconut lovers! I hope that you will try it and enjoy!
Here is the recipe:
1 1/2 cup sugar 1 tablespoon all purpose flour 3 tablespoons corn meal 1/4 teaspoon salt 1/2 stick (1/4 cup) of butter or margarine 4 large eggs 1 teaspoon vanilla extract 1 (15 oz.) can crushed pineapple, drained very well 1 cup flaked coconut
Directions: - HEAT oven to 350°F. - COMBINE sugar, flour, corn meal and salt in bowl of electric mixer; mix until combined. Lightly beat eggs and then add them to sugar mixture in bowl, along with the vanilla. Beat at medium speed, until well combined. Next. add melted butter or margarine, pineapple and coconut flakes. Mix well. Pour into unbaked pie crust. - BAKE One hour or until lightly browned and knife inserted in center comes out clean. Cool to room temperature before serving. - Refrigerate leftover pie.
