How To make Pineapple Apple Cake
TOPPING 1 Cup unsweetened coconut flakes

1/2 Cup unsweetened pineapple chunks :
drained & diced
3/4 Cup apple, peeled cored and diced
1/4 Cup walnuts :
choped
CAKE 1/2 Cup unsweetened pineapple chunks drained and diced
3 extra large eggs :
or 6 whites
1/3 cup vegetable oil plus 1 teaspoon
1 1/2 cups unsweetened apple juice :
concentrate
3 tsp. cinnamon be generous
2 cups flour :
plus 2 tablespoons
2 1/2 tsp. baking soda
1. Preheat the oven to 325 degrees. Grease and flour a 13 X9 X 2 inch baking pan. 2. To Make the topping: In a medium sized bowl place coconut and premois ten. Stir and set aside. 3. Dice pineapple and measure out 1/2 cup, place in hand strainer over a small bowl and press lightly with a spoon to reduce moiture content. Set aside to drain. 4. Combine apple and coconut, ad d cinnamon and chopped nuts, stir in drained pineapple and mix well; set aside. 5. To Make Batter: Measure out a generous half cup, dice and drain as above; set aside. 6. In a large bowl combine ggs, oil and apple jui ce concentrate, beat for 1 minute. 7. Add drained pineapple and stir; then mix in cinnamon. Add flour a little at a time, stirring after each addition, and then beat well by hand for at least 2 minutes. 8. Stir in baking soda quickly and then mix 28-20 beats, immediately pour into prepared pan. 9. Using your hands, sprinkle topping over batter and then bake 28-29 min utes or until a cake tester comes out clean. 10. Remove pan from oven and plac e on a wire rack until completely cooled.

Pineapple upside down cake is so delicious. We have simplified it so much that you can make it in about an hour. If you have fresh pineapple by all means use it, but we simple use the rings you can buy in the can. They fit perfectly into a 9 inch cake pan. As always, you can alter the recipe according to your liking. For example if you want it a little sweeter, add more sugar. If you're diet conscious, add a little less.

Due to the simplicity of the recipe, it's great when friends suddenly show up for dinner. The kids will love it as well. It keeps nicely for a few days. I never put mine in the fridge as the edges tend to get hard. Simply leave it covered on the counter at room temperature. Watch the video and let us know what you think.

This super moist pineapple cake recipe is the best I’ve ever had (and I don’t use the word ‘best’ lightly)! It’s made up of soft pineapple cake layers, filled with a pineapple cake filling, and topped with a stabilized pineapple whipped cream frosting. It may sound fancy and complex, but trust me when I say that each element of this cake is SO EASY to make!
INGREDIENTS:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
Pineapple Cake
▢2¼ cups (270 g) flour - plain, all purpose flour
▢¼ cup (25 g) cornstarch - also known as cornflour in some countries
▢2 tsp baking powder
▢½ tsp baking soda
▢½ tsp salt
▢1¼ cups (250 g) white granulated sugar
▢3 large eggs - room temperature. I use size 7 eggs
▢¾ cup (160 g) unflavoured vegetable oil - I use canola oil
▢2½ cups (566 g) canned crushed pineapple - in pineapple juice (not syrup). 20 oz can in the US.
▢1 tsp vanilla essence/extract
▢1½ tbsp (20 g) fresh lemon juice
Pineapple Cake Filling
▢¾ cup canned crushed pineapple - in pineapple juice (not syrup).
▢¼ cup (50 g) white granulated sugar
▢¼ cup (25 g) cornstarch
▢¾ cup (175 g) milk - full fat
▢1 tbsp (15 g) fresh lemon juice
▢¼ cup (56 g) unsalted butter - cold and cut into cubes.
▢1 drop yellow gel food colour - OPTIONAL (see note 4 on blog post).
Pineapple Whipped Cream Frosting
▢1 cup (225 g) mascarpone - cold. See note 1 on blog post if you don't want to use mascarpone.
▢½ cup (55 g) icing sugar - also known as powdered sugar or confectioners sugar
▢1 tsp vanilla essence/extract
▢1½ cups (335 g) whipping cream - cold, minimum fat percentage of 34%
▢½ cup (112 g) canned crushed pineapple - with the excess pineapple juice removed (see note 2 on blog post).

Pineapple Upside-down Cake
Serves 4-6
Recipe in English:
Ingredients:
-Makhan (Butter) unsalted 100 gms
-Cheeni (Sugar) powdered 1 Cup
-Anday (Eggs) 3
-Vanilla essence ½ tsp
-Namak (Salt) 1 pinch
-Baking powder 1 & ½ tsp
-Pineapple juice ½ Cup
-Maida (All-purpose flour) sifted 1 & ½ Cups
-Makhan (Butter) unsalted 100 gms
-Brown sugar powdered 6 tbs
-Pineapple rings
-Cherries
Directions:
-In bowl,add butter and whisk well.
-Add sugar and whisk well until well combined.
-Add eggs and whisk well.
-Add vanilla essence,salt,baking powder,pineapple juice and mix well.
-Add all-purpose flour,whisk until combined & set aside.
-In saucepan,add butter and let it melt.
-Add brown sugar,mix well and cook on low flame until sugar is dissolved.
-In 8 x 8 inch baking pan,add cooked sugar syrup,place pineapple rings,cherries and pour prepared batter.
-Bake in preheated oven at 180 C for 35-40 minutes.
-Remove the cake from the oven and run a knife around the edges to loosen them from the sides of the pan.
-Let it cool down,cut into pieces & serve!

-Cheeni shamil karein aur ache tarhan whisk karein.
-Anday dal ker ache tarhan whisk karein.
-Vanilla essence,namak,baking powder aur pineapple juice dal ker ache tarhan mix ker lein.
-Maida dal dein aur combined hunay tak whisk ker lein & side per rakh dein.
-Saucepan mein makhan dal ker melt karein.
-Brown sugar dal ker ache tarhan mix karein aur halki ancch per cheeni ghul janay tak paka lein.
-8 x 8 inch baking pan mein cooked sugar syrup dal ker pineapple rings aur cherries rakh dein aur tayyar batter pour ker lein.
-Preheated oven mein 180 C per 35-40 minutes kliya bake ker lein.
-Cake ko oven sa nikal lein aur cake ki sides per knife dal ker ghooma lein ta ka pan ki sides lose ho jayein.
-Thanda ker lein aur pieces mein cut ker ka serve karein.
