How To make Pickled Red Onions
2 teaspoons salt
1 large red onion
peeled and sliced
1/4 teaspoon black peppercorns
1/4 teaspoon cumin seeds
1/2 teaspoon Mexican oregano :
dried
2 cloves garlic peeled and halved
1/4 teaspoon salt
1/3 cup cider vinegar
Bring 2 quarts of water to the boil in a saucepan, then add 2 teaspoons of salt and the onions. Bring back to the boil and boil a few seconds, until the onions have softened slightly and the red color has bled into the white. Drain, and tur n the slices into a bowl. Coarsely grind the peppercorns and cumin, and fold into the onions along with th e rest of the ingredients. Add just enough cold water barely to cover the onions , and fold all together. Let stand for at least 4 hours :
or longer, until they take on a beautiful pink color.

Today, we learn how to make pickled red onions. This is a recipe that is basically a similar version of the pickled red onions we served on the food truck, but adapted more for home. Pickled red onions are good on almost everything, tacos, sandwiches, salads, and as you'll see in the next episode, caramelized pickled red onions are the best thing in the world and make my bacon egg and cheese something wonderful.

My two favorite methods for pink pickled onions, based on the experiments in this video:
FAST: Slice a red onion into thin wedges from tip to root. Dump them in boiling water for 10 seconds, drain the hot water, then cover them all the way up with room temperature vinegar plus a little lime juice (and maybe some water if you like them less tart), a pinch of salt, a handful of sugar, and maybe a few spices. Let cool and then keep in the fridge for a week or two. They're pickles as soon as they cool down.
SLOW: Slice a red onion into thin wedges from tip to root. Cover them about 2/3rds of the way up with room temperature vinegar plus a little lime juice (and maybe some water if you like them less tart), a pinch of salt, a handful of sugar, and maybe a few spices. Throw them in the fridge and stir once or twice over the next few hours. They'll be pickles in about a day. Keep in the fridge for a week or two.
