Ají Picante (Colombian-Style Hot Sauce)
Ají picante or Ají Piqué is a spicy sauce from Colombia. We keep it in the refrigerator all year round. It is an absolute must for Colombian Empanadas and it is the perfect sauce to flavor soups, stews and the perfect dipping sauce for Patacones.

Betty's Perky Picante Sauce
Betty demonstrates how to make Perky Picante Sauce. This is a quick and easy sauce that can be used as a dip for tortilla chips or as a sauce for meats and Tex-Mex entrees.
Perky Picante Sauce
½ cup finely-chopped onion
¼ cup finely-chopped green bell pepper
1 medium clove garlic, minced
1 tablespoon extra-virgin olive oil
½ cup fresh tomato, peeled and chopped
1 ½ tablespoons chopped pickled jalapeno pepper
¼ teaspoon dried oregano
¼ teaspoon dried ground cumin
1/8 teaspoon salt
1 ½ tablespoons white vinegar
8-oz. can tomato sauce
Saute ½ cup chopped onion, ¼ cup chopped green pepper, and 1 minced garlic clove in 1 tablespoon heated olive oil, until vegetables are tender. Combine sautéed vegetables, ½ cup chopped tomato, 1 ½ tablespoons chopped pickled jalapeno pepper, ¼ teaspoon dried oregano, ¼ teaspoon dried cumin, 1/8 teaspoon salt, and 1 ½ teaspoon white vinegar in container of an electric blender. Process for a few seconds, until smooth, but still showing bits of the individual ingredients. Add an 8-oz. can of tomato sauce, and pulse or stir well. Pour into a serving bowl and serve immediately. (You may cover and chill the sauce to serve it cold; also, you may heat it in a small pot, if you prefer to serve it hot. It is very versatile!) Homemade Picante Sauce
Ingredients
10 dried chipotle peppers
2 cups chopped tomatoes
2 cups mixed chili peppers chopped – jalapeno peppers are great here, as are serranos, or go with a variety
1 small onion chopped
4-5 garlic cloves chopped
3 tablespoons cilantro
1 tablespoon cayenne powder
1 teaspoon ground cumin
½ cup water
Salt and pepper to taste
2/3 cup cider vinegar
Juice from 1 small lime
Instructions
Add the chipotle peppers to a small pot and cover them with water. Bring to a quick boil then remove from heat. Allow them to soften about 20 minutes. Remove the stems, chop them and add them to a food processor.
To the food processor, add tomatoes, jalapenos, serranos, onion and garlic. Process to roughly chop.
Add remaining ingredients and process until smooth.
Add the sauce to a large pot and bring to a boil. Reduce heat and simmer for 15 minutes.
Cool and store in sterilized jars, or use it right away.
